Meatballs Monte Carlo

The sauce was great with the addition of Italian Seasoning; however, the meatballs were a flop. I had doubts about a meatball recipe that didn't include an egg as a binder. Should have followed my instincts. They fell apart during the frying. My family liked the flavor of this dish anyway. I highly recommend an egg in the meat mixture and adding extra seasoning to the sauce.

Goat Cheese Stuffed Tomatoes

This was exceptionally spicey, even though I cut back on the roasted red pepper. It seems an awful waste of a perfectly good garden-fresh tomato. (The innerds are the best part--they aren't incorporated back into the filling??) My husband couldn't eat more than 3 bites of his. We seldom are disappointed with recipes from this site. We will give something else a try.

Honey Wheat Bread I

I made adjustments to the recipe as advised by the reviews: extra honey, added molasses, etc. It was just ho-hum. Also, I made it in my bread machine and baked it in the machine as well. Perhaps I'll give it one more shot sticking to the exact recipe and baking it in the oven. I can't fathom how it beat out all other cake/bread entries in a 4-H fair.

Grilled Venison Backstrap

This is THE BEST venison recipe I've tried. It is melt in your mouth tender. The apple cider added a sweetness to the barbeque sauce. My entire family loved it and my husband took the leftovers to work to share with his coworkers.

Berry Custard Pie

Like Nalova, I found the dough mix to be quite sticky. You may want to keep the cooking spray handy so you can apply to your hands as needed for easier spreading. Or maybe add a little more baking mix to the dough mixture. It was well worth the effort -- it's a hit!

Homemade Fresh Pumpkin Pie

I read a lot of reviews before attempting to make this (my first) pumpkin pie from scratch. I doubled the seasonings and added a pinch of cornstarch to the pumpkin mixture as suggested in a review. It turned out excellent! My husband's mother bakes pumpkin pies every Thanksgiving. Hers comes out watery once cut into. Mine set up firm. I had trouble getting the pumpkin mashed smooth. Going to the blender first didn't work. The blades didn't "take hold" of the small chunks. I used a manual masher, then the electric mixer, and finally the blender to get the smooth consistency. Though the final product was delicious, it was A LOT of work. I've used canned pumpkin to make pies that turned out just as yummy. I don't think it was worth all the time and hassle to use fresh pumpkin. I'll stick to canned pumpkin.

Butternut Squash Soup

Baked Pancakes with Sausages

After reading the reviews, I made the following adjustments to the recipe: 4 TBS sugar instead of 5 tsp. 5 heaping tsp. baking powder 1/2 TBS vanilla Omitted salt Used lard, not shortening. (Makes pie crusts and cookies scrumptous, too! Sorry, I learned to cook from my grandma. She lived to be 92 despite the lard.) Also, I used presifted flour. I didn't sift the dry ingredients together--just stirred. The pancake turned out extra fluffy (1-1/2" tall) with wonderful flavor. The vanilla suggestion was a great one! My husband and son loved this recipe and want me to make it in the future.
