I single-handedly catered a luncheon for 25 with a broiled chicken dish, salad, steamed veg, homemade rolls, and cupcakes...a big hit with my hubby's company and kudos from everyone made me feel like a champion!
My cooking tragedies
My first attempt at homemade lasagna gave my (then) new hubby and I tummy troubles; I added too much salt to a homemade roll recipe for a few hundred when interning at a middle school kitchen.

Slow Cooker Roast Beef
A triumph! My "slow" cooker actually cooks quite fast, so I only cooked it for 10 hours on low, but when I served it, the meat just crumbled to my delight! I just served it with the broth it simmered in, even my picky-eater-8 year old daughter loved it! I roasted potatoes for the side, I was afraid to add them to the crock pot for fear of overflowing!

Easy Vanilla Ice Cream
I made this with whole organic milk, regular condensed milk and a packet of cheesecake-flavored pudding mix (not sugar-free), and the result was a surprisingly delicious flavor quite close to Pudding Pops! Yummy!

Chicken Breast Cutlets with Artichokes and Capers
Just made this dish for my husband, and he gave it great reviews! It was a simple dish, easy to make with ingredients I had on hand. Will definitely make this again and no need to tweak it...it's perfect!
