About this Cook
I am a first year medical student thinking about pediatrics. I use baking as a stress relief but like to bake-and-take, i.e. give away what I make instead of eat it (although I do favor the dough!)! I am a HUGE Chicago Cubs fan. The most important thing in my life is my relationship with Jesus Christ. He is my Savior and guides me in my life. I pray that my life is a witness for Him and HIs love and that I glorify Him in what I do, even in cooking!
My favorite things to cook
I love to bake! That is my stress relief from school. I am always trying to come up with new recipes, even though the DON'T always work! My parents are moving this summer and my dad doesn't know what he's going to do without my cookies!
My favorite family cooking traditions
We make Sunday lunch every week together and serve it to college students who were at church that Sunday. It's always fun to do with my mom and I'll miss it next year.
My cooking triumphs
I recently made a delicious and beautiful red raspberry velvet cake. I was proud because I haven't made many cakes from scratch. However, my favorite moments are when I create a new cookie recipe and my dad says, "Mmmm, now THAT is a good cookie!"
My cooking tragedies
So far, the only "tragedy" has been letting the bread dough rise too long. If this happens, when it bakes it falls flat. This makes for an overly yeasty-tasting bread. Not very appetizing.

Grandma's Gingersnap Cookies
These had a great flavor. We compared them to a molasses cookie recipe and they taste very similar but with the added bite of ginger and not quite as sweet. I liked them. The dough is a bit sticky, so when rolling them, it helps to have a bowl of water waiting to dip you fingers. Somehow, this wetting of your fingers keeps the dough from sticking to you.

Cranberry Pistachio Biscotti
These are PERFECT biscotti. The other recipe I've used is (I guess) a classic Italian biscotti and uses no butter/oil, so it's pretty hard. Perfect for dipping but very difficult to eat otherwise. These, however, are perfect with or without coffee/tea. I also love the fact that the oil used is olive oil...it keeps the ingredients true to origin of the cookie!

Chewy Coconut Cookies
This recipe is super easy and really refreshing. I think maybe the only thing that would top it off would be to add toffee bits. Although, if I did that I might degrease the sugar a bit. Yummy cookie!
