Pancakes

Reviewed: Oct. 19, 2009
This recipe was mediocre. The pancakes weren't horrible but I am not left thinking I'll make it again either. I thought the pancakes were pretty bland and I even added vanilla. They also didn't rise as much as I would have liked. Will probably look for a buttermilk pancake recipe next time.

Flatlander Chili

Reviewed: Oct. 12, 2009
I loved this! I made a few alterations - I did not use the can of tomato juice, instead I used a 14.5 oz can of diced tomatoes. I also only used 2 tbsp + 1 tsp of chili powder b/c my husband doesn't like it to be too spicy. I sauteed the veggies in EVOO before I added the rest of the ingredients. The flavor of this was great! I will definitely make this again!

To Die For Blueberry Muffins

Delicious! I added about a tsp of vanilla. I thought about changing the sugar in the topping to brown as others suggested but decided to try it as written the first time and I am glad I did! Husband and I thought these were great!

Honey Butter

Reviewed: Jun. 2, 2009
I saw that someone else said it tasted like Texas Roadhouse's butter. I love their butter so I made this and also added cinnamon like the other reviewer. This was great! I can't wait to try it on more types of bread!

Honey Grilled Chicken

Reviewed: May 3, 2009
I read a lot of reviews before I made this. I was unsure of this due to the mixed reviews on the site - seems like you either change a lot about it and love it (I don't think you can change it that much and still give it 5 stars though!) or you don't like it at all. I added salt, pepper and cayanne based on some other reviews. I marinated it for 3-4 hours. It had an okay flavor, not very strong. The honey mixture was definitely more of a glaze consistency than a marinade or sauce - maybe I did something wrong. I also made only 2 chicken breasts and we used the sauce for 4. It wasn't horrible b/c we ate all the chicken, but we won't be making this again.

Coconut Cream Pound Cake

Reviewed: Apr. 11, 2009
Pretty good. I did not have coconut extract so just used vanilla. It had a good flavor but I wanted more coconut flavor so I will def buy some coconut extract! It took a lot longer than 1 hr 20 minutes, not sure how much longer though b/c I checked it frequently so it didn't overbake.

Bananas Foster Belgium Waffles

Reviewed: Apr. 11, 2009
I'm giving this 5 stars b/c the sauce is excellent. Will make again and again and will use on ice cream, pancakes and whatever else I can think of as well. I personally thought the waffles were too eggy for my tastes and would give the waffles a 3.5 if I could. I did not have rum extract for the sauce so I used 3 tsp vanilla (for the entire amount of extract in the sauce). The sauce was just amazing.

Grandma Gudgel's Black Bottom Cupcakes

Incredible. I baked them for less time, about 25 minutes. I added about 1 tsp vanilla to the cream cheese mixture. They taste great chilled. I've given them to friends at work and they love them. I also thought they were very easy to make. Will make again and again.

Sour Cream Pound Cake

Reviewed: Mar. 10, 2009
I doubled this recipe and baked it in a bundt pan. I added some vanilla extract and a smaller amount of almond (did not measure either). I lowered the temp to 350 and baked for an hour and 10 minutes. I took the "pinch" to be 1/8 tsp so I used 1/4 tsp baking soda. I either used too much or my pan was too small b/c this cake rose quite a bit - it actually hit the top of my oven and burned on some parts! I also used a heaping cup of sour cream b/c other reviewers said their cakes were dry. Other than the cake rising more than I expected, this was delicious. It tastes great alone and even better with a cup of coffee. The crust is delicious as well, kind of crunchy and sweet. My husband wished the whole surface was the crust. I will def make this again!

Braised Balsamic Chicken

Reviewed: Mar. 10, 2009
The only reason I give this a 4 instead of 5 is personal taste - I like balsamic to an extent but don't love it. For people who do love balsamic, I am sure this will get 5 stars. The only thing different I did to this was add a bit of fresh minced garlic. This recipe was very easy and took minimal time. I served it with steamed broccoli - some of the sauce from the chicken got on the broccoli and it was a perfect seasoning for the veggies. I will more than likely make this again but will prob cut the balsamic with chicken stock next time for a more mild balsamic flavor.

Hot Spiced Cider

Reviewed: Dec. 22, 2008
Really, really, really good. The reason I gave this 4 stars is b/c I significantly changed the way it is made. I heated it on the stove until it was hot but not boiling then simmered it for 30 minutes. I took the suggestions of others and used a tied off coffee filter for the spices (but not the brown sugar). I had clementines and no oranges so I used 2 of those. My husband and I both thought this was absolutely delicious. In fact, I am going to make some more now - perfect remedy on a day when the wind chill is -zero!

Glazed Apple Cream Pie

Reviewed: Nov. 14, 2008
I admit I was skeptical about this pie - I wasn't sure how apples went with custard. I made it based on the 5 star rating it has - I am glad I did! My husband and I both loved this! I used more apple than the recipe calls for and I added a bit of nutmeg. We chilled the pie really well based on other reviews and it turned out fabulously. I would definitely make this again and again!

J.P.'s Big Daddy Biscuits

Reviewed: Oct. 26, 2008
This recipe says it may take you several attempts to get it just right - I think that's probably accurate. Attempt #1 on 10/25/08 - I used butter instead of shortening b/c I love butter. The dough is really, really sticky so you need a lot of flour to handle/roll it (at least much more than I used b/c the dough stuck all over the place). I tried to handle the dough as little as possible after reading other's reviews. These didn't turn out as well as I wanted them to, they were not big and they were dense, but not hard. They had great flavor. I definitely have a feeling my results will improve with repeated attempts!

Grandma Ople's Apple Pie

Reviewed: Oct. 12, 2008
This recipe is on this website twice!! I LOVED this! The only thing this is missing is cinnamon. I took the advice of other reviewers and added cinnamon to the cut apples (and a little nutmeg as well). I have never made a lattice crust before - easy! I also have never made apple pie with a sauce that you poured over it. This recipe is a keeper - will make again and again - maybe again today!!!!

Apple Crisp IV

I made this recipe b/c I had too many cut and peeled apples left over from another recipe. I halved the recipe b/c I already had a pie baking. It was delicious! Just the right amount of apples, crunchiness and sweetness. Def would make again and again!

Spiced Slow Cooker Applesauce

Reviewed: Sep. 28, 2008
I had a bunch of apples I had to do something with quickly, so this was a great way to use them up before they went bad. I personally could barely smell it while it was cooking, only could smell it a bit at the end, but nevertheless turned out very well. I took the suggestion of another reviewer and put some of it on plain oatmeal as a topping - delicious!!! I would definitely make this again! Thanks for the recipe!

Fresh Fruit Cobbler

Mmmmm! I used all peaches. This was so easy to make and even easier to eat!! My husband and I ate almost the entire pan in one morning! I added about 2 tbs of brown sugar and a bit of cinnamon and nutmeg to the batter. I had to bake mine a lot longer than 30 minutes, though. Delicious!
