Eggplant Antipasto
When I made this I didn't chop up the eggplant small enough to really fit on a cracker or pita chip with much else.... i guess i wasn't really thinking as i was chopping. But, after it cooked, to remedy the situation, i put the whole thing in a food processor. Man is it good! It came out as more of a dip, but it's a delicious dip, and so healthy.

Easy Chocolate Tofu Pie
i omit the vinegar and use the "healthier graham cracker crust" from this website. the result is a very low fat pie for my dad who is on a very low fat diet. he can have chocolate pie again and loves it! thanks so much.

Pumpkin Turkey Chili
My boyfriend and I really liked this! this is what I did differently after reading the other reviews. I added corn and instead of the seasonings listed, I used two packets of chili seasoning. I also thought it seemed really thick like the other reviewers and made it a little creamier and less chunky by mixing in about 3/4 of a cup of butternut squash soup. finally i topped with goat cheese instead of cheddar or sour cream. It's great!
