Chiles Rellenos (Stuffed Peppers)
I have made these before and they are absolutely wonderful......if you can't take the heat, you can use anaheim peppers instead. Because I haven't found a good recipe for ranchero sauce, we purchase it from our favorite Mexican restaurant and spoon over the top of the peppers. These freeze well also, so if you are taking the time to prepare them already, take a little extra time to prepare some for freezing.

Muenster Chicken and Mushrooms
A friend gave me a wonderful recipe that is similar but uses Italian-seasoned tomatoes for an added touch of flavor. Use egg instead of milk, dip in breadcrumb/parm cheese combo,brown, and place in a casserole dish. Saute mushrooms and Italian seasoned tomatoes and spoon on each chicken breast. Cover with a slice of muenster cheese and bake about 30-40 minutes. Serve with a lemon butter pasta and asparagus for a wonderful dinner!

Black-Eyed Pea Chowder
This is a regular in the winter time in our house. We like using the black-eyed peas w/jalepenos for that little zip and serve with hot corn bread. The nice thing is that you can use any kind of bean....try black beans...mmmmmmm
