I followed the recipe and incorporated some suggestions in other reviews. The soup was completely mediocre. The flavor fell flat. I had high hopes, but I will not make this again.

This recipe was extremely disappointing. I followed the recipe and made the suggested additions in other reviews, but it just didn't work for us. The soup had a nice substance, but the flavor was flat. Since we did not want to waste the soup, we dumped a jar of salsa in to liven it up.

We loved this soup and have renamed it Mexican Minestrone. Based on what was in the house, we substituted consume, Rotel tomatoes, barley and garbanzos for the beef broth, stewed tomatoes, hominy and Great Northern beans respectively. I was unsure about the amount of cilantro the first time that I made the recipe, but found that it was a it was a great addition and very refreshing. Have made it quite a few times. Always great!
