About this Cook
Hi! I am a 26 year old blessed wife and mother to two wonderful little boys. I have been married for 6 years and God has given me the most wonderful husband, one who has gotten used to me trying out new and crazy recipes on him! Our oldest son Christopher was 4 as of New Years Eve 2008, and our other son Jesse will be 2 on 07/06/07 . (yes, I just missed the 7/7/07 thing). I went to school for nursing and am taking my liscensure to become an R.N, but I am now a stay at home mom who loves to cook! ;) I also enjoy playing sports (specifically softball, cheerleading, and paintball), watching sports (specifically baseball and football...go EAGLES!!) being involved with church and the Lords work, scrapbooking, reading, being with family and friends, and a good cup of coffee any or many times of the day.
My favorite things to cook
Anything that will really bowl people over. I'm Italian, and I love to watch people eat and enjoy a good meal. Coming back for seconds is the best compliment, and I will cook anything to achieve that! I am really into fish lately, and finding the best, most interesting recipes for that. I also love a good slow cooker recipe. Even though my job is at home, its so wonderful to have a meal preparing itself all day in the crockpot! And the smells! MMMMmmm
My favorite family cooking traditions
I love when my side of the family does the Seven Fishes on Christmas Eve. We don't always get the chance to so its a special treat when we do. Also, I have the recipe for gravy (or as Americans know it, spaghetti sauce) that my mother taught me, which her mother taught her, etc. And I hope to pass the generations-old recipe onto my daughters.
My cooking triumphs
Anytime I try a new recipe and my husband loves it and wants me to keep it in the recipe box is a triumph for me! But I catered my son's first birthday party last year, complete with a bunch of chafers, for about 75 people. it was a lot of work, but a lot of fun!
My cooking tragedies
The worst I can think of is when my husband and I were dating, and I liked cooking to impress him. He grew up in a meat and potatoes family, and I was trying to turn him on to fish. I made tilapia the way a greek woman showed me how - at least, how I thought she showed me. When it came out of the oven, the fish and potatoes were still submerged beneath an inch of olive oil! Still in that awkward dating phase, I still served it and he managed to eat it. Now we laugh about it, but to this day the thought of that oily fish dinner turns his stomach!

Creamy Butternut Squash With Cinnamon Soup
Followed the recipe exactly. Would probably give this 3.5 stars. I think I would have just appreciated a sweeter end result, as echoed by my husband. I think I am going to heat up the leftovers and add some brown sugar to sweeten it up a bit. Was a lot of fun to make though, very easy directions to follow, and the kitchen smelled like a perfect autumn fragrance.

Eggplant Parmesan II
Wonderful! I had 2 eggplant from the local farm that I needed to use up. Peeled and sliced my slices about 1/2 inch thick. Changes were I dip my slices in a mixture of seasoned bread crumbs/locatelli cheese, and fried in oil instead of baked. Made a double layer of eggplant in a 9x13 pan (did the sauce and parmesan inbetween layers) and cooked for 30 min - then for another 5 min. i added slices of mozzarella on top (this is the same way i prepare chicken parmesan). my husband and 2 picky boys ate this right up - the little boys did not even realize they were eating vegetables! that alone is worth 5 stars to me ;) thanks for sharing!

Blackberry Cobbler
Went to an orchard yesterday and picked a ton of blackberries, so naturally turned to allrecipes for something to use them in - thought this was decent. not the best cobbler i have had, but it did look pretty cool with the jelly roll thing, once it baked it puffed up in all the right places. i heard the sugar/water thing is authentic for cobbler, but it did seem a bit moist, even though the dough did absorb alot of the water. Thanks for the recipe!
