Sesame Tilapia

A simple, tasty easy to make dish...what more could you want. I've tried it twice; once without the sesame oil and once without the Italian seasoning. Both worked very nicely, although using both tends to confuse the flavors.

Spinach and Mushroom Quesadillas

Simple, real tasty and quick...what more could you ask for? Since I like a lot of "heat" in my food, I added some chopped fresh jalapeno peppers.

Lemon Herb Barbeque Sauce for Chicken

The sauce is great, although I did leave out the marjoram and added a couple slices of jalapeno. Since chicken breasts are too bland for me, I used it on thighs...advantage is you can cook it right on the grill, don't have to bother with aluminum foil

Grilled Portobello Mushrooms

There's really no need to marinate the mushrooms; just brush the mixture on the 'shrooms right before grilling. Served it with steamed basmati rice and sauteed spinach.

Veggie Poached Eggs

Nice idea, putting the eggs right in the veggies. I didn't like the idea of the spaghetti sauce though, so I made a gravy from a packet of the chicken seasoning that you get in ramen noodles. Spinach works really nice here; also a sprinkling of fresh parmesan right before serving

Quick Chicken Enchiladas

Not being a fan of using canned soups as sauces, I didn't think this was going to work as well as it did. I sprinkled some shredded jalapeno jack cheese over the soup mix and browned it; gave it a little extra zest.

This is gooood eatin'. I added another 1/4 lb. ham (I love ham) and used jalapeno Jack (gives it a nice little bite). Adding 8 oz. mixed frozen veggies gives it a little more color and texture.

Mushroom Burgers

Adding one more egg to the mixture and frying in oil rather than cooking spray helps firm it up (much like eggs foo yung). Using toasted whole grain bread crumbs gives it a little more hearty flavor. I added a little garlic and chili powder just because I like the flavor.

Veggie Fajitas

Great stuff...with a few minor modifications: use only 1 of each pepper, double the onion, double the mushrooms ( I'm a sucker for mushrooms....you can get the same "meatiness" of a portobello by just cutting each mushroom in half rather than slicing it ) and the green onions should be cut lengthwise rather than cross section. Add all the veggies at once and stir fry, don't cover. MARVELOUS

Stuffed Cabbage

Never would have thought of freezing the cabbage; great touch. Used crushed tomatoes in puree instead of soup ( soup is too salty ). Added a handful of raisins for a little sweetness.

You can't find a simpler, more versatile form of bread. I've made these a number of times and find that you really don't need the baking powder; it makes them too puffy.

Asian Fish With Vegetables

I'm sorry, but microwaving fish doesn't work for me....it's too easy to over or undercook. The sauce is a definite winner, though.
