The Best Lemon Bars

Great lemon bars. The only thing I did differently was add the zests of both lemons to the filling (why waste them?). I love the crust--perfectly sweet to compliment the tart lemon.

Chili Rellenos Casserole

Pretty good. I did the 8x8 and omitted the 1/2 c of milk. I used regular tomato sauce, but will use enchilada sauce next time for a little more flavor. Oh, and I didn't use as much cheese. Husband liked it too.

Asian Lettuce Wraps

These turned out great, but with a little tweaking, but it was a great place to start. Mine needed a little more sauce (I added more hoisin and soy sauce), I used pork instead and added julienned carrots. I sure loved eating the leftovers for lunch the next day.

Fabulous Wet Burritos

These were okay. The sauce was a little too sweet, I'd suggest using 1/2 a can of the condensed soup to remedy that. I probably won't make these again, neither my husband nor I enjoyed them very much.

Wedge Salad with Elegant Blue Cheese Dressing

The dressing was wonderful--except for my very spicy garlic (but that was my fault). I added glazed walnuts and that mixed well with the blue cheese. Will do again but will probably half the recipe (makes a little too much for my family to use up).

I was really excited to try this recipe because I love feta cheese. However, excuting the recipe was a little frustrating. The phyllo was hard to work with and that's why I gave it a three. I'd probably give the taste a four. Maybe using won ton wrappers in a mini muffin pan would make this a more user friendly recipe.

Old Fashioned Onion Rings

Although it is time consuming, these were great. My husband was surprised at how well they turned out. We seasoned them with cajun seasoning, seasoned salt, garlic salt, salt and pepper. Very, very good.

Any Flavor Taffy

This turned out really well--especially for being my first try making candy. I too didn't have kool-ade, so I used jello (I cooked the jello with the sugar). It lacked flavor, but I am currently making it again, but with kool-ade to see if we can't get some grape taffy. The kids loved helping out with streching it.

Lemon Square Bars

I had limes instead of lemons, so I decided to experiment. It turned out pretty good. Although my filling started getting pretty brown on top before it was thoroughly cooked though. The limes were a different twist, but I'd add less juice next time. They were pretty tart. And I added a few drops of green food coloring, so people would know the difference. The crust was a little thick too. I think that next time I make it, I will cut down the crust recipe.

Fudge

This was so easy and so good--no waiting for sugar to melt in a saucepan. It melts in your mouth too. I want to play around with it next time to see if I can get a peppermint ribbon running through it because then it will be very, very similar to the chocolate mint pieces that Crate and Barrel would sell in tins at Christmastime. Thank you for the recipe.
