Spaghetti Salad

I crave this salad during the summer when the tomatoes and cucumbers are ripe out of the garden! I usually make it without the meats and I'm not a big avacado fan, so I leave that out, too. Either way, it's delicious!

Seven Layer Salad

For Christmas use diced red and green peppers on one layer. You could really use just about any veggies in this one - celery slices, shredded carrots, diced cucumbers, broccoli, black olives...

Slow-Cooker Chicken Tortilla Soup

So delicious! I didn't use the crockpot, instead just did it on the stovetop and it was ready in less than an hour. I sauted the onions and garlic in some olive oil and then cut up 3 boneless skinless chicken breasts into bite sized pieces and fried them until no longer pink and tossed everything into a stockpot to heat through. I also added some pinto beans and then served the soup over some rice (as suggested by another reviewer) and garnished with more cilantro and sour cream and added a bit of lime juice. Great with the "hint of lime" tortilla chips! Kids loved it too!

Quick and Easy Chicken

This was a big hit with my family! I doubled the sauce too and served it with rice. For those wanting to cut back on carbs, use Splenda instead of sugar and serve it with zuchinni, squash and bell peppers instead of rice. I'll be making this again and sharing the recipe with family and friends.
