Baked Kale Chips

It's a little wasteful-- ANY stem part comes out chewy instead of crispy-- but delicious. My one year old and I gobbled up an entire batch. (Those I brushed with olive oil were tastier than those I sprayed with cooking spray.)

Nectarine Blush

I was really surprised by how tasty this was! I'd make it again except I peeled my nectarines and I'm no good at peeling or even chopping nectarines, so this drink took longer to prepare than I'd have liked. I also used homemade buttermilk (milk + vinegar).

Jay's Signature Pizza Crust

Easy and, I assume since I can't eat wheat, awesome. It looked and behaved like pizza crust... I was confused about the amount of flour, though. It seemed like it needed a lot more than the recipe called for. In any case I'll be using this recipe again.

Buttery Cranberry Pie

We liked it, but it was tart. Tart tart tart. I can eat an whole lemon, but this pie was a bit of a challenge. Still tasty, though, especially with vanilla ice cream on top! When I make it again it will be without the lemon juice.

Cranberry Pork Chops

My mom really enjoyed this but I didn't, and for the same reason: It tasted almost exactly like barbecue sauce pork chops. It gets thumbs up for being quick, easy, and fairly nutritious, though.

Microwave Cherry Crisp

My filling bubbled up through the topping so much that there was very little "topping"; most of it baked into the middle and bottom of the cherries. Thumbs up for being quick and easy, though-- my daughter made this as a treat before school! We'll probably try it again.

Spinach Enchiladas

Three kids with varying tastes and a ricotta cheese-hating husband LOVED this. (It's unheard of for all five of us to be enthusiastic about the same dish.) Even better, it's gluten-free for me! So easy, my eight year old son helped make it. Quick, inexpensive, healthy--it doesn't get much better than this!

Quinoa and Black Beans

This was my first time making quinoa, and I'll definitely be making it again. Even my carnivorous husband loved it, although he wanted a bit of cheese on top. I'm amazed at how quick, easy, and tasty this was! --I did add some diced tomatoes which I highly recommend both for flavor and attractive color. (Only use one can of beans! That's perfect!) --I did not do any special preparation to the quinoa. I was afraid it would be slightly crunchy or nutty, like brown rice can be, but found it to be soft and pleasingly palatable instead.

Cheesecake Dip

Too runny is right! I started with 3T of milk to *4* ounces of cream cheese, and ended up having to add all the cream cheese I had--6 ounces--to get the consistency remotely correct. Definitely start with 1T of milk and then increase as necessary! ----I then added much less whipped topping than called for--approx. 1 cup--and found the taste tipped far toward "whipped cream" and away from "cheesecake". Add this ingredient, too, to taste, or don't add at all. ----I won't use this recipe again; next time I'll just wing it for better results!

Ginger-Spiced Cucumbers

In Missouri I'd grown up on vinegar & sugar marinated cucumbers. This was like this but possibly not worth the extra trouble. I might make it again to serve as a side dish, but as my family didn't care for it, I might not.

Indian Peanut Stew

My kids didn't like this, and I wasn't sure about it myself after my first serving. However, I found myself craving this stuff like some addictive drug and went back for bowlful after bowlful without restraint. In fact, that was weeks ago and I'm craving it now. Oh yes, I'll be making this again! Quick, easy, filling--and addictive!

Grilled Pork Chops with Balsamic Caramelized Pears

I liked this a lot, but my husband only liked the chops. In the future I may make this without the onions & pears, or simply without the pears, which were good but probably not worth the trouble for a weeknight. I may make the whole recipe again for guests (very gourmet look and flavor).
