This was my first time making quinoa, and I'll definitely be making it again. Even my carnivorous husband loved it, although he wanted a bit of cheese on top. I'm amazed at how quick, easy, and tasty this was!
--I did add some diced tomatoes which I highly recommend both for flavor and attractive color. (Only use one can of beans! That's perfect!)
--I did not do any special preparation to the quinoa. I was afraid it would be slightly crunchy or nutty, like brown rice can be, but found it to be soft and pleasingly palatable instead.
