My cooking triumphs
A slow cooker sloppy joe recipe to die for; great swiss chicken casserole; finally knowing how to improvise/substitute now that I've been cooking a while with various ingredients; I measure my success by my husband's and family's appeal for certain recipes.
My cooking tragedies
When I lived in Spain with a family, they made the best rice pudding. I took the recipe back with me and still to this day I can't get it creamy/milky and tasty like theirs. :-( My rice never cooks right and turns out chewy.

Downeast Maine Pumpkin Bread
Delicious! Used fresh pumpkin (which has more water content) and omitted water. Put in mini loaf pans and didn't have to alter time in recipe, and baked evenly. Followed others suggestions with subbing some of the oil for butter and using 1 C brown sugar + 2 C white sugar. A keeper!

Spanish Rice I
Delicious and hubby thought was fantastic! I used cooked rice, omitted peppers b/c didn't have any, and used low sodium V8 choice. Will make again!
