Addictive Sweet Potato Burritos

super good! i used 1 can refried black beans to make it easier and left out the water. stupidly i only bought 1 sweet potato so i had to half the recipe. should've read the reviews before i made it and let the spices saute too. still it was great with sour cream and gaucamole.

Butternut Squash Risotto

mmmmmmmmmmmm...it's worth all the work. i didn't read the reviews before i made it so i had a lot of stock left over (it really only needs about 2/3 what it calls for). i used vegetable broth, didn't have enough so i added about 8 oz of butternut squash soup - yummy.

Butternut Squash Pizzas with Rosemary

I also added some balsamic vinegar to the squash and onions and used a Boboli crust. Very tasty but there was way too much squash to fit on the crust and it did keep falling off. Maybe turning the squash into a puree/sauce would work better.

Orange-Ginger Tofu Triangles

Too tangy for me - maybe it was the vinegar? Didn't change anything but left all the marinade in while cooking. Was worried it was still too "soft" for my bf so I pan fried it a little on each side after it was baked - he loved it.

Black Bean Cigars

Really good and simple to make. I used larger tortillas and stuffed them completely so it made 4 of those. Only made 2 the first night, refrigerated the rest and made it again the next night and it's just as good.

Vegetarian Link Gravy

I made this gravy for my boyfriend that LOVES biscuits and gravy. He's not a vegetarian so he was wary about it. But one bite changed his mind. Now he wants it all the time!
