Delicious Ham and Potato Soup

This was delicious! My daughter likes cheesy potato soup, so I added 1 cup of shredded cheddar to the flour mixture after the milk was added, and I added half a package of broccoli (gotta get the green in the kids any way you can!). Didn't change anything else; just added those two things. It was so good! This is a definite keeper.

Fresh Tomato Pie

Delicious! I made this with home-grown orange heirloom tomatoes and half a vidalia onion. I followed the directions as written and even my daughter, who hates tomatoes, liked it! It was a little watery, but you can't really account for the water content of vegetables. I don't think, overall, the wateriness was a detraction. With the mayo, it reminded me of a BLT; I may add some bacon bits to it next time.

Oatmeal Peanut Butter Cookies

Delicious! I used 2 sticks of Smart Balance 50/50 olive oil butter blend, since I don't use shortening. These came out fantastic! I'll definitely make these again.

Spaghetti Sauce II

This was really really good! I used this sauce to make meatball sandwiches. I sauteed the onions and garlic, then put all the ingredients into the crock pot with the meat balls, cooked on high for 4 hours and they were great! This is definitely a keeper. I may never buy jarred sauce again!

Irish Barmbrack

This was delicious!I was looking for an Irish dessert that didn't have alcohol in it to take to a church function. This was a hit! I did make a few changes, to accommodate the ingredients I had on hand. I used dried blueberries, cranberries and apricots for the fruit, Celestial Seasonings Madagascar Red Vanilla for the tea, and I didn't have lemon marmalade, so I used orange fig preserves. The batter appeared to be a bit dry, and I was a little worried, but the cake itself turned out moist and delicious. Just make sure you sort of push the batter down in the pan and flatten it. I got many requests for the recipe. This is a definite keeper!

Chewy Chocolate Chip Oatmeal Cookies

Excellent flavor, but they did come out flat. I had to bake them for 15 minutes because at 12, they were just gooey dough. Overall, they're delicious and I'll make them again.

Broccoli Beef I

I made this as the recipe instructs and it was a little bland. Not too bad, though. Perhaps a bit more ginger or some chili powder for a kick would be good. I used stew meat instead of steak. I'll make this again; my kids liked it.

All American Apple Pie

I scaled this recipe to feed 12, and made it in a 9x13 glass pan for a potluck. It turned out perfectly and got rave reviews. I even made copies of this recipe for friends who asked for it. This pie recipe is now a standard in our home and turns out perfectly every time.

Cream Cheese Bars II

These are delicious! A great dish to take to a pot luck if you don't want to deal with a whole cheese cake. I prefer them without the cinnamon sugar topping, but otherwise, this is a keeper!

Cheesy Ham and Hash Brown Casserole

I made this recipe for 120 people for a church dinner. It was very well recieved! I did alter it just a smidge, by doubling the amount of ham and using mushroom soup instead of potato. I served it with warm spicy applesauce and biscuits. I've already gotten requests to make it again next month. Definitely a keeper. Very yummy and good comfort food on a cold night.

Paprika Pork Chops

This is fantastic! I served it along with new potatoes and green beans and home made applesauce. My kids who hate pork loved this. Defninitely added to our dinner menu rotation.
