Zucchini-Chocolate Chip Muffins

This was the perfect way to use all of the extra zucchini I got this year! The batter seemed a bit dry before I folded in the chocolate chips and zucchnii so I added about 1/2 c. more milk and it worked great.

Lemon-Cream Cheese Cupcakes

These were very easy to make and plated well. I made them for a baby shower and everyone loved them! The only criticism I would have is that the cupcakes were a little drier than I like. No one mentioned it, but I noticed it. The frosting is to die for!

Fudge Puddles

The peanut butter cup was excellent. However, I ha d alittle problem with the fudge. I am not sure what happended, but the moment I put the vanilla extract in the melted chocolate it clumped up...I ended up with a clumpy, gooey mess that was very difficult to use to fill the cups. I think I will stick with the peanut butter cup cookies from this site instead.

Cream Cheese Frosting II

Irish Soda Bread I

This was a very easy recipe to follow. And the flavor of the bread is great! Mine came out a little drier than I had hoped for, but next time I will follow the advice of previous reviewers and "steam" the loaves. I did take the advice of another reviewer and used currants instead of raisins.

Sausage, Peppers and Onions

I had this same recipe several years ago from Classico pasta sauces. Try making this same recipe but with Classico's Sausage and Pepper sauce. It ties the flavors together really well. My husband proposed to me the first night I made this so I like to joke that it was the food that motivated him. =)

WOW! Thanks for another excellent recipe Beth! For years I have been trying to find an orange cookie recipe that was like my ex's grandmothers' and this one is WAY better! I love icing, so I followed the suggestions of some of the prior reviewers and doubled the icing. MISTAKE! There was more than enough icing just as was written. I should know better than to try and "improve" one of Mrs. Sigg's recipes!

Mint Chocolate Cookie Crunch

What a great idea! The texture and flavor combination do remind me of thin mints. I followed the advice of prior reviewers and used 2 tsp of the peppermint extract. I also used double stuffed Oreos which melted a little in the hot chocolate. YUMMY! I am going to bring them to our holiday office party tomorrow!

Easy OREO Truffles

Very easy to make! I had a lot of luck with the two forks idea. Also, 9 cookies for the top was way too much. I probably could have gotten away with 5 cookies for 48 truffles. I only wish they were a little sweeter. Maybe next time I will use milk chocolate instead of semi-sweet.

Simple Baked Apples

I didn't have walnuts or raisins and forgot (whoops!) to add the milk. After baking the apples for 45 minutes they still seemed firm to me, so I stirred them and put them back in for 5 minutes. I repeated that two more times and they were finally soft enough. These were awesome! So mildly sweet and perfectly tender. To those out there who found the sauce to be too rich I would suggest "forgetting" the milk. =)

I only used one can of beef broth and added a lot of garlic salt and about 1 tsp of Italian seasoning. I also omitted the bag of frozen veggies but took the advice of a prior reviewer and added about 1 c. of red wine. My husband loved it! Topped with aged parmesean and served with fresh beer bread!

I couldn't find King's brand bread at our grocery store so I used the Orowheat version. It was still fantastic, but I think it would have been better if we used the King's brand.

Apple Cinnamon Oatmeal Bread

A very good staple for making a healthy breakfast. I subbed 1/2 c. of baking Splenda for 1/2 of the sugar and 1/2 c. of flax seed for 1/2 c. of the flour. I also used sugar free applesauce and lower sugar apple cinnamon oatmeal. I made muffins with the batter instead of the loaf - 19 minutes at 375 degrees. My husband has already eaten two since they came out of the oven 20 minutes ago. I will absolutely be making these again!

Banana Crumb Muffins

These are awesome! The perfect way to use those bananas that are going bad too fast. UPDATE: To make these a little healthier I subbed 1/3 of the flour for flax seed and 1/2 of the batter sugar for baking splenda. My husband devoured them all the same and didn't notice the difference!
