First and foremost, I am a child of God/born again Christian! I live to serve and glorify Him! I am married to my wonderful husband and together we have five beautiful children, so far, and two happy-go-lucky dogs. I enjoy cooking for family and friends, even the dogs, too. My favorite things to cook
Mexican food!!! Authentic or "American authentic", I seem to make Mexican food often. Our friends joke that our house is the "(Our first names) Mexican Restaurant", because that's what is usually on the menu for our guests. I also love to make Thanksgiving/Christmas dinner. And the crockpot is my best friend in cooking! Pretty much anything except dishes with Italian white sauces (i.e. alfredo). My stomach doesn't sit well with white sauces, not sure why. Lately, we've incorporated a healthier eating pattern in our household, so often times, I make recipes with healthier alternatives. However, we are in no way health buffs (not yet, at least). :)

My cooking triumphs
I consider all meals a triumph if they come out tasting good! :) But I must say, my favorite cooking triumph was making an entire Thanksgiving dinner for my husband the first year we were married. Homemade rolls and all. He also remembers that meal fondly and we love to reminisce about that day.
My cooking tragedies
No real tragedies, necessarily, but I will admit I get the fire dept. called out to my house about every couple years from burning something. Haha! :) Usually from cooking something in oil on the stovetop. We have a super sensitive alarm system that's stubborn, that's why. No major fires!

Creamy Macaroni and Cheese
Very good. One of my children will not readily eat Mac and Cheese, except the boxed kind or Boston Market's. I'm not crazy about boxed or Boston Market's, but the entire family loves Mac and Cheese. So to find one that suits all our tastes, would be a sure miracle. This one still isn't it, but it has come the closest so far. :) I attribute it to adding the chicken broth and possibly the evaporated milk. Everyone ate it, including the pickiest one. Personally, I don't see the point of any Mac and Cheese recipe with cornstarch or flour, so I never use that anymore. Roux's are good for other dishes, but not Mac and Cheese. I can get my desired texture from milk and cheese just fine. Next time, no mustard! I only put in a squirt and still found it to be too much, so I imagine a full 1.5 TBSP would be excessive. A good base recipe to tweak around to your liking and add extra yummy ingredients to (i.e. bacon, onion, ect...). :)

Apple Cinnamon Oatmeal Bread
This is pretty good. I only did a few things differently. Never heard of chunky applesauce, so I just used smooth. Added more cinnamon. Used one package of oatmeal (half in batter, half on top). Used King Arthur's White Whole Wheat flour instead of all-purpose. And added sliced almonds to the top. The edges did start to brown a little too much towards the end without being fully done in the middle. Didn't take away from the taste on the inside, though. Overall, pretty good.
