Salmon Chowder

Oh my! A very satisfying taste sensation! Only changes I made were using fresh salmon instead of canned and fresh garlic instead of powder. Made this for Ash Wednesday and it was very difficult for my family and myself to keep it to one serving only to maintain our fast! Enjoyed the leftovers immensely...I do believe it was better on the 2nd day. Only drawback was that, with fresh salmon, it was a rather expensive dish to make. I will keep my eye for salmon on sale and buy in bulk (freezing for future use). This is definitely a keeper and I will add this recipe to our Lenten meal list for meatless Fridays! Thanks for submitting such a sumptuous soup recipe

Chocolate Caramel Nut Pie

Oh my goodness! This pie is so good on so many levels! I made sure to follow the recipe EXACTLY as I do not fancy myself much of a baker (I tend to opt for "savory" as opposed to sweet in my areas of cooking expertise) The instructions were very easy to follow. Yes, it is a time consuming process but, believe me, the final result is well worth it. I'm thinking the prior reviewer must not have used a graham cracker crust as I cannot imagine anyone not loving this pie! The only thing I may change is to increase the proportion of the cream cheese layer...I only had a 10inch pie plate to use and could have used more of this layer to completely cover the sliced Snickers(tm)bars. I plan on using this recipe for a Girl Scout mother/daughter bake off next month. I will let you all know how we fared! PS...this pie is very rich that instead of 8 servings as listed, I think 12-16 smaller servings is more realistic for the waist line!

Slow-Cooker Chicken Tortilla Soup

Very good and easy soup to make! I made this tonight substituting salsa for the enchilada sauce. Also, I did not have fresh cilantro to garnish. It was a very good soup but think it could have been better had I followed the recipe as written. I will definitely try this again.

Mostaccioli with Spinach and Feta

I made this the other night with ingredients I had on hand: 2 cans of petit chopped tomatoes, drained (instead of fresh) and ziti instead of mostaccioli. I also increased the garlic to 3 cloves. This dish turned out wonderful! It was very flavorful, and pretty, too. I served it as a side to a concoction of cooked Italian sausage with red peppers, onions and minced garlic (stir fried in EVOO). My husband actually topped his pasta with the sausage mixture and enjoyed his "one dish" meal. This recipe is definitely a keeper! Thanks for submitting.

Marinated Greek Chicken Kabobs

I was planning a dinner for our parish priest this past weekend. I wanted a greek theme. This marinade is truly awesome. It was so good that my husband even commented on how good the meal was! I marinated both chicken and lamb (for kabobs)using this recipe and I kept the meat in the fridge, overnight, in freezer baggies. The meat was so tender! Some of the best lamb I've ever eaten (and mediterranean food is my favorite) Thank you, thank you, thank you for submitting this recipe.
