Black-Eyed Peas and Tortillas

I thought this came out really good. However, I added pickled jalapenos instead of fresh, and tripled the recipe to fill 8 tortillas. I also allowed it to "cook down" so that there was virtually no liquid. Distinguishable citrus flavor - tangy and delicious! Serve with sour cream.

Baked Spaghetti Squash with Beef and Veggies

This recipe definitely needs some tweaking. A little on the bland side. The salt shaker was making it's way around the table at our house. I love the kid-friendliness of this squash, though. I told them it was spaghetti and they did not question it. :) Would not make it again as is, but there is something to build on here...

Vegetarian Cottage Cheese Patties

This was very good. I served it over mashed potatoes with green beans on the side. Yum! Had a good ole home cookin' taste to it. The kids gobbled it up, too. It's a winner!

Butter Bean Burgers

Awesome! My family is not vegetarian - but we LOVED this recipe. I thought they were better than regular hamburgers. My husband said that he "wouldn't go that far" - but that he really thought they were tasty and wants me to make them again and again. He even passed the recipe on to one of his buddies at work. This is a must try! I followed the recipe as written - except I used pickled jalapenos and added some bread crumbs as needed to help the patties stay together.

Fry Bread Tacos II

Whew. This was a serious ordeal for an end result that was not that great. It was a ton of work - and the bread tasted like fried baking powder to me. Very bitter. The taco ingredients were also cumbersome and just ordinary. I will never be making these again!

Grey Cup Nachos

Hmm... I sure had to make a lot of changes to this recipe. But, I think it's a decent base. I eliminated the green pepper and mushrooms. I used pickled jalapeno pepper slices instead of a chopped fresh one. I added 2 cups of shredded cheddar and a 3.8 oz. can of sliced black olives. And, I served it with sides of salsa and sour cream. The cheesy beef mixture is really good and is what makes this recipe unique.

Roasted Red Potato Salad

Roasting the potatoes for potato salad did indeed add some nice flavor, but the dressing (basically just mayonnaise) needed something more. I much prefer my classic potato salad dressing over this. A little sugar, vinegar or pickle juice maybe? It's very unimpressive as it is.

Ultimate Twice Baked Potatoes

This is a good, classic recipe. I thought it needed a few minor changes, though. I increased the salt and pepper to 1 teaspoon each. And, I added a tablespoon of homemade dry ranch dressing mix to the mash. They were a hit!

Pork Sausage and Cabbage Pitas

This was surprisingly - really, really good! Wow, it makes a lot. And, it's extremely filling - we had leftovers for days. I may freeze some of it next time, because it can get old. I'll definitely be keeping this recipe!

Pork Chops With Red Cabbage

I wasn't crazy about this recipe. The cabbage ended up overcooked and mushy. It also was in desperate need of some salt. I'd much prefer my traditional sweet & sour cabbage with pork on the side prepared some other way. Sorry!

Kung Pao Chicken

We really didn't care for this at all. It sounded so good - we were really disappointed. It was surprisingly uninteresting and tasted like nothing more than chicken sautéed in soy sauce to us. Sorry!
