Okra, Chicken and Rice Casserole

This was actually quite good! I love okra, so I was thrilled to find something EASY to use it in. Substitutions I made: I melted 2T of butter in the pan as the oven preheated, and then I baked 6 chicken legs for 30 minutes at 400 before turning the heat down to 350. I transfered the chicken to a plate and let it rest while I mixed the rice ingredients. I used basmati rice instead of brown, and a soup can of milk instead of water. I also used cream of chicken soup. Finally, I added a can of french style green beans. I baked this dish for 50 minutes tightly covered with foil and it when my whole house smelled great I knew it was done. Wow! So easy and delish!

Peanut Butter Balls III

These couldn't be any more wonderful. Because it is what we had on hand I used half natural peanut butter and half crunchy Jif. The flavor was just right. Following a commenter's suggestion I added cereal, but we didn't have rice crispies so I crumbled some frosted flakes and put them in. Added a nice, sweet crunch. Finally, husband came home with milk chocolate chips instead of semisweet so the coating was made of those, which may have contributed to their sweet, rich, wonderfulness. I put a toothpick in each peanut butter ball before the first chill, and then slid it out as I dipped each in a spoonful of melted chocolate. It made the process much easier. Finally, I used three bags of chocolate chips - much more than the 2 cups called for in the recipe. I'll make these every holiday season from now on, for sure.

Grandma Ople's Apple Pie

This was stunningly easy and so amazingly delicious. I did brush the bottom crust with egg white and I tossed the apples with 2t cinnamon, but other than that I followed the recipe exactly and it turned out PERFECT.

Enchilada Sauce

I didn't have any semisweet chocolate on hand so I used 1/2 oz of unsweetened chocolate and 1t of sugar. This recipe makes the perfect spicy/sweet sauce to go with chicken enchiladas. Yum!

Italian Sausage Chili

Very easy and delicious. I like that it is not over seasoned or too complicated. I added another cup of water and a cup of rice after boiling the tomatoes et.al. and it was amazing!

Prego® Porcupine Meatballs

We loved these meatballs! The turkey stayed moist and tender, and cooked just right simmering on low for 20 minutes. I sauteed the rice with butter and onion, before adding the water and a beef bouillon cube. This added a nice tang to the rice in the recipe. An excellent dish which will make much loved leftovers.

Kitchen Sink Salad Dressing

Tasty! I like that it tastes unique and not exactly like any other dressing. I used only 1/3 cup mayo and and still find it a tad too mayo-ey. Next time I'll try to half this recipe, as we'll never eat 3 cups of dressing. :)

Spinach Cheddar Muffins

Following the advice of other reviews I added 1/4t of garlic powder and 1/4t of onion powder and a dash of nutmeg. I also sauteed one jalapeno in 1 T of bacon grease, before adding the thawed spinach. I only used 4T of butter in addition to the bacon grease. I think these are delicious and will make again and again. Great snack food!

Turkey Bow Tie Skillet

I really like this recipe - I followed the directions of others and added 1T of chili powder and 1T of red pepper flakes to the turkey while it cooked. In addition to the veggies called for I added some chopped red pepper and mushrooms. I followed the advice and added 20 oz of chicken broth instead of one can, and to thicken things up I added one small can of tomato paste with the tomatoes. After all the modifications this recipe is great and will be made again, often.

Banana Crumb Muffins

These muffins rock! I beat the egg and then added the sugar to the egg before mixing the egg to the bananas, and I think this helped distribute the bananas through the flour mixture somehow. In any case , this recipe was ridiculously easy and will be made again and again and again in my kitchen. I looooooove the crumb topping!

Excellent. I used a bunch of fresh spinach rinsed and pulsed in the food processor. I used 1/4 cup mozzarella and baked for 40 minutes. Will make again, often.

Famous Butter Chicken

wow. Perfect, moist, tender baked chicken. I baked for 45 minutes, and changed nothing about the ingredients except for the amount of butter as suggested by other users. The crackers make a great crust. Will use often in the future.

Baked Potato Soup

Amazing and delicious - perfect for a cold winter day. I doubled the recipe and it still only served four of us (because it is so yummy) but I used waaay more flour even still (2/3 cup) and 1/2 milk 1/2 broth for the liquid. I used a cup of sour cream instead of the half and half - stirred it in at the end with the cheese - and it was perfectly creamy. I love the addition of hot pepper sauce - which adds a nice kick - and I didn't so much "dice" the potatoes as I did "squish them out of their skins" into the roux. All in all this is a keeper - a huge hit at my house.

Roasted Creole Potatoes

not bad - very good blend of seasonings and spices. I boiled the sausage with the potatoes, but still think the potatoes could have stood to be a bit more crispy. Allover good, though, I will make again.
