Blue Cheese Herb Spread
I love blue cheese, but many people don't. The blue cheese taste was perfect, just a hint and not overpowering. Easy to make. I also made it into a ball and would recommend a simple garnish for added color (if you really want to impress your guests). I'm making it again this weekend!

Bill's Blue Cheese Dressing
This is the best blue cheese dressing ever! I love homemade dressings and this is a keeper! I tried to reduce the fat a little and used 1/2 the mayo and added 2/3 cup buttermilk.

Eggplant Antipasto
This recipe is very light and flavorful. I served it with fresh mozorella and parmesan on crackers. Everyone loved it! I actually roasted it longer than the recipe calls for. Also, if you can let it sit in the refrigerator for a couple of days, the flavors really come together.
