I love to entertain, so cooking is the best. My freezer is always ready to have guests and friends like to visit to see what we are eating that's new...and some old favorites.
My favorite things to cook
Spicy food! Southwestern eggrolls, anything mexican. The spicier, the better. Traditional home cooking with a twist. Add something new and we'll try it.
My favorite family cooking traditions
Making chocolate doughnuts with my Dad. The kids always had the holes, so yummy.
My cooking triumphs
My daughters' birthday cake. A train party with a choo choo cake. Marshmallow fondant made the train look wonderful!
My cooking tragedies
Mac-n-cheese with onions. Hold them for anything else, not mac-n-cheese.

Savory Pork Stew
Great recipe, cooked all day in the crockpot, then pureed some of the broth and veggies to make it thicker. Plenty of potatoes so used those instead of adding more cornstarch. Will be making this again with a few changes. Add carrots and celery, use cream corn instead of cream soup.

Mondi's Super Simple Chicken
Excellent flavor! Used Basil, thyme and rosemary, garlic, s&p - don't forget to season with salt & pepper. Rubbed butter mixture under skin, then melted remaining and poured it over the top. My 3 yr old non-meat eater gobbled this up! Made for 25 people and they loved it. So easy. Baked for 50 minutes and the meat was perfectly cooked. Forgot the lemon juice that others recommended but will try next time.

Mexican Lasagna
The flavor and texture were off in this dish. There needed to be crunch and everything was mush. The family ate it, but the left overs went untouched.
