About this Cook
I have a 2 1/2 yr old son who is one finicky eater and a husband who loves just about anything I cook. I can't wait for the day my son finds his taste buds and a love for food and will eat something other than grilled cheese or noodles. Preferably I will cook and he will rave! (ha ha) I love being a mom and have found over the past 5 yrs that I enjoy cooking too. I am finding my way to flavor - garlic, herbs, sauces, spices, etc. I was raised cooking w/salt and pepper and made good comfort food dishes, but now I'm interested in learning about all the different combinations of flavors! I experiment every chance I get, I'm growing an herb garden this summer and can't seem to function if I'm out of olive oil anymore.
My favorite things to cook
I love making different kinds of tacos, comfort foods such as casseroles, slow cooker recipes, roasted veggies, grilling, sauces and marinades. I am now starting to make my own salad dressings, which I'm excited about. We seem to be eating healthier too, I am cooking more with fresh fruits and veggies and usually have quite a variety on hand.
My favorite family cooking traditions
Beans and Frycakes. My grandma was a cook at a college in southern California (when they used to actually make real food AND desserts at schools). My dad says she used to make a chocolate cake every day at home from scratch. Anyways, her ham and beans were delish, she used ham hocks, pink and white beans, a can of tomato sauce and onions and let it simmer all day. She then served on the side, frycakes. Years ago, she and my great-grandma would make the dough from scratch, more modernly, the dough is the frozen Bridgeford bread (let the loaves rise first), then take a chunk of dough, flatten it out and fry it in oil! Accompany with butter, syrup, jam or whatever you want. Yum. This is a combination our family still makes today. It's something we've all come to crave.
My cooking triumphs
Probably when I make my mom's enchilada pie, my entire family loves it, I've got it pretty much perfected and always double the recipe.
My cooking tragedies
I haven't had any major tragedies to talk about, probably when I've made a dessert or a dish that I was thinking would be out-of-this-world-outstanding, and everyone would love, turned out not-so-good-at-all and ended up throwing out all the left overs.

The Best Meatloaf I've Ever Made
This meatloaf was good, the consistency was great, good sandwiches the next day, definitely satisfied the meatloaf craving I had. However, I have managed to make it better in previous meatloaf renditions. I did like the toasted crumbled bread, and will use in the future, usually I use breadcrumbs or crackers.

Boilermaker Tailgate Chili
I changed this recipe some with the veggies I used, canned beans (used chili and kidney) and used turkey and johnsons bratwurst, but followed the spices per the recipe and I loved it. I make a lot of chili and am pretty particular about the taste of my chili, this one's a keeper and maybe the replacement of my "go to chili"!

Unbelievable Chicken
I ended up marinating for two nights instead of one and it turned out really tender and flavorful, perfect for the BBQ. Will keep this recipe handy for more BBQ's to come.
