About this Cook
I started experimenting with recipes as a child and considered cooking professionally. I've always liked bringing joy to people through food. Now that I have a child, I look for quick & easy ways to feed the family. My daughter (3 1/2) loves to help me in the kitchen so I usually make simple things so she can help. I am looking forward to getting back into the "gourmet" aspect of cooking once she is older. For now, we eat a lot of preschooler-friendly foods (i.e...not too spicy, not to fancy).
My favorite things to cook
Anything I can prepare in less than 30 mins. or leave to cook without watching the stove. I like to use a crock-pot, grill, and steam bags. We eat a lot of simple Italian and Mexican foods; stews and roasts; grilled meats & veggies; and of course, macaroni & cheese and hot dogs for our daughter. (see above)
My favorite family cooking traditions
Every year before Christmas my mom would make a huge batch of fantastic tamales. Finally, one year she asked if I wanted to help her and she taught me the long, time consuming process. We had a great time together. She moved out of state, so we can't make them together anymore. One of these years I will make them on my own (when I can find the time) and eventually teach my daughter as well.
My cooking triumphs
When I was about 24, I cooked my first Thanksgiving dinner and everything turned out great. I lived in a small apartment with a tiny kithchen and I was able to do a big turkey, stuffing, etc. all from scratch and it all turned out super. I'm proud of that accomplishment. Now, more than 10 years later, I rarely attempt such a feast. I'm unable to be the perfectionist I once was.
My cooking tragedies
The 'big one' was when I made blackened salmon several years ago. I had no idea how much smoke would be produced. We had to open up all the doors and windows and most of the smoke alarms went off. Smoke was billowing out of the house as if the house was on fire. Fortunately, the salmon turned out fine, great actually. It was some of the best salmon I've ever eaten. Now of course, I know that it's best to order "blackened" foods from a restaurant, where they can cook it in a well-ventilated kitchen.

Broccoli Cheese Crepes
My family really likes these, even my 3 yr. old daughter. I don't make my own crepes, I buy them pre-made at the store (in the produce section), which makes this dish super simple. I make the sauce according to the recipe, with an extra dash of worchestire or other seasoning (whatever I feel like at the moment). I use frozen broccoli and diced cooked chicken breasts. In a pinch, canned chicken would probably work well too. Sprinkle the top with paprika for a prettier presentation. Since making these, I keep store-bought crepes on hand as they usually last several weeks. There are so many fillings and sauces that one could use. Yummy and easy dish for lunch or dinner. I usually serve these with a great garden salad. So many possibilities!

Funeral Potatoes
Oddly, our family also calls this dish "Funeral Potatoes" and that's the title I used to search for this. As others have mentioned, I too use the cubed hash browns (or the O'Brien kind); I use shredded cheese (of the cheddar variety) and one can of soup - cream of chicken. I also use corn flakes instead of bread crumbs. Also, I add about 1/2 of an onion, diced. Awesome! A great compliment to ham. I always make this for Easter. Good for potlucks too!

Asparagus Angel Hair Pasta
Yummy and healthy too! I served it with grilled salmon. A few things I did different: I used jarred minced garlic instead of fresh, and I used frozen asparagus spears instead of fresh. They snap as easily into pieces while frozen as does fresh asparagus, without the waste. My husband doesn't like tomatoes or avocado, so I didn't add them. I think if I made this for companay I would serve them on the side. I omitted the cheese, but I think shredded parmesan would be good too. Oh, I also added cooked shrimp. I added a bit of butter to my husband's serving (not as healthy) to make it a bit creamier. Very good dish! There are so many possible variations that it's a good recipe to have the main ingredients on hand in case of unexpected company.
