Eggplant Burgers
I didn't really enjoy these. I followed the instructions closely, but they were still quite soggy and flavourless, and I was not a fan of the texture.

Puerto Rican Tostones (Fried Plantains)
I love fried plantains. I didn't dip them in water like suggested, I didn't like the sounds of putting water in a frying pan. They still turned out excellent, and went well with a mix of ketchup/mayo that someone else had suggested. I will make these again for sure!

Monte Cristo Sandwich - the Real One
I used a frying pan instead of a deep fryer, which made this a little more difficult (some of the sides were a little undercooked) but this was still a great recipe, and the sandwiches tasted great.
