Raspberry-Coconut Bars

I could not get the coconut topping to set. It seemed to be runny at the end of the baking time, so I baked about 10 minutes longer - still runny topping. It tasted good but couldnt serve this to company. I would use egg whites beaten till soft peaks next time. 1/3 cup preserves is not enough for a 9 inch pan!

Caramel Shortbread Squares

These taste just like Twix chocolate bars. Yum. I followed others' suggestions of doubling ingredients (except the chocolate chips on top - it doesnt need it) and the freezing, chilling etc. They turned out perfect. I couldnt just stop eating them. Probably one of the best squares I've made.

My Mom's Parmesan Chicken

Delish! I had no problem getting the coating to stick. I used chicken breast and pounded to the same thickness for even baking. The butter makes the breading crunchy, but the wine is not necessary - it made the bottom soggy. I will leave that out of the recipe next time and skip the salt. The cheese gave it enough saltiness.

Pistachio Crusted Chicken Breasts with Sun-Dried Cherry and Orange Sauce

I could not tell there was pistachio in my coating - maybe I chopped it too fine. Breading stayed on the chicken and looke nice. I had my pan too hot on the first side of the chicken, it got quite dark very fast. The sauce really makes this a stand-out dish. I had leftover cranberry chutney which I heated with a bit of red wine and poured over top. Worthy of a dish for company next time!

Holly's Chicken Cordon Bleu Casserole

I will have to try it again as written. I didnt have cornflakes so I used bread crumbs - a mistake as they were quite mushy. Mine took longer to cook than stated. Sauce was ok. Worth another attempt.

Potato Logs

I used cooked, cold potatoes and had no problem with them keeping their shape. I also added about 1/2 cup of parmesan cheese and cooked in bacon drippings instead of oil. Yummy.

Roast Pork with Maple and Mustard Glaze

Very tasty. I cut way back on the maple syrup. 1/2 cup will make a thick enough glaze. I seared the meat first and basted throughout the cooking and put apples around the roast then thickened up the pan juices to make an apple gravy..mmmmm...

Peach and Cream Cheese Torte

The amount of dough was perfect for my smallest pie plate to cover only the bottom and a bit up the side. It was very creamy and tasty, much like something from a European bakery. Would be nice with plums or apples too.

Soft Garlic Breadsticks

Got the full 20 out of this batch. Made the dough without machine. I used 3 cloves fresh garlic and sprinkled extra parmesean on top after brushing with butter. Very tasty.

Zucchini-Coconut Cookie Bars

My new favourite zucchini recipe! The glaze makes a special touch. I left out the dates, but this would be great with carrotts if zucchini are not in season. Will make again and again....

Pavlova

I thought the meringue would be crispy but it had the texture of a marshmallow on the inside. I followed directions exactly. It cracked around th edges and didnt look so nice, but the guests liked it. To make superfine sugar - put regular white sugar in your food processor or blender for 1 - 2 minutes.

Honey-Mustard Salad Dressing

Start with 1/4 cup mustard, then adjust from there. It was a little overpowering mustard taste as written. I added a big squirt of honey to compensate. Will surely make again with a little less mustard. I did used the grainy kind and dijon (instead of yellow mustad) so perhaps that is the reason for the stronger flavour.

Cranberry Mango Bread

Not very thrilling. I used 2 mangos as suggested and waited for flavours to blend the second day. Maybe mangos are one of the fruits that dont lend themselves to baked goods. I doubt that I will make this again...

Sauce Rosee

I made a couple of minor adjustments - red pepper instead of green and light cream instead of whipping cream. This makes enough sauce for the family package of refrigerated tortellini. Lots of sauce and quite tasty too.

Orange Peel Bread

I was looking for an old-fashioned recipe when I came across this. Turned out perfect. I was worried there was not enough butter to make it moist but it was great. Would be nice with an orange drizzle or and fruity cream cheese spread.

Feta and Sun-Dried Tomato Stuffed Chicken

Nice marinade! I cut open the chicken breasts and put filling in, then held together with toothpicks. I browned each side in a little olive oil before finishing in the oven. Will make it again for sure.

Salsa Chicken Rice Casserole

This was not at all thrilling. I wanted to give it 2.5 stars. Thank goodness I added some extras to make it edible - cumin, chili, a can of black beans and some corn. Wont make this one any time soon.

Caribbean-Spiced Roast Chicken

Wow! This is the most flavourful chicken. I did forget the cloves but it was still so tasty. I doubled the lime juice and brown sugar. I thickened the pan drippings to pour over the chicken and rice. Im going to try this as a marinade for chicken pieces for the bbq.
