Enchilada Casserole III

This is very good!! Pass the sour cream! I do think that the enchilada sauce needs more water; it was too thick and not enough. I will make more sauce next time. I too used black beans instead of refried and I think they make it really good. KEEPER!

Chile Verde II

This was very good! Although I don't understand where everyone else had too much sauce; mine didn't have enough! Maybe because I scaled the recipe down to serve 4. Next time I'll do different. Definitely a keeper! Thanks!

Ginger Glazed Mahi Mahi

Cheesy Potato Gratin

I agree with the others that this is oily, very oily. I even added a little more potatoes. It's very "heavy" on the stomach. Good taste, but we felt like we gained five pounds! Won't make again.

This was good, but if you're used to eating healthy, I don't suggest it. It was very "heavy" on the stomach. It felt like we had consumed a lot of fat. We won't be making it again.

Paella I

This was excellent! My mother was Cuban so I know good paella when I taste it! It was very similar to what she made. I made it for Father's Day and got rave reviews. Which is good because they all know their spanish food! I eliminated the squid and used scallops instead of mussells. This worked great. Also, needs more wine (to taste of course) and I added a little hot sauce, muy bueno! Will make again!

Jamaican Beef Patties

This recipe was good; however, I agree that it needs to keep some liquid. I used half the bread crumbs and that worked. Also, my husband and I think these would be better with a sweet dipping sauce. Not sure what kind yet, but I'll try it next time.

Grilled Chicken Breast with Cucumber and Pepper Relish

I thought this recipe was okay; My husband liked it. The relish needs something; I think next time I will add chopped pinneapple. IT's good with fresh sald and corn on the cob.

Serbian Ground Beef, Veggie, and Potato Bake

This is the second time I have made this and this time it was better. I made some changes: I used more potatoes (sliced 1/4 in. thick), used sour cream mixed with milk instead of half and half and added golden raisins which really made it great! I highly suggest that! Will be making this again. Thanks!
