Japanese Zucchini and Onions

This was simply delish!!! So easy and the taste was marvelous. I will make this again and again and recommend it to family. I served this as a side dish to Firecracker grilled salmon recipe, also on this site. I thought the zucchini and onions stole the show. Thanks for a wonderful fall vegetable staple.

Guacamole

HOLY GUACAMOLE!!! This was awesome. I am a big fan of guacamole and had never made it before until now. This was even tastier than Chipotle's guac (which I thought was the best until now). Even my husband kept saying how great it was (and he's not a guacamole fan at all). Thanks for an awesome recipe!

Bulgogi (Korean Barbecued Beef)

This was pretty good, but it seemed like something was missing. I made the recipe as is, but I think it needed more spice or something. Kind of bland. Might be better with red pepper flakes???

Allie's Mushroom Pizza

I am not a huge fan of pizza sauce, so this was a nice change of pace. I did add some sauteed garlic, but other than that followed the recipe as written. I used crimini mushrooms since that's what I had on hand. Very good flavor. Thanks!

Strawberry and Feta Salad

OMG! I LOVED this salad. If I could give it 10 stars I would. I had to use raspberry vinegrette dressing instead of raspberry vinegar because I didn't have any, but that was my only substitution. I will start making this instead of the strawberry/spinach salad that used to be my favorite. Thanks for a wonderful recipe!

Firecracker Grilled Alaska Salmon

YUMMY!!! This was excellent, and I typically don't like fish, especially salmon. It had such a great flavor: a little sweet and a little spicy, but delicious. I followed the recipe exactly, only cutting it in half because I was feeding 2 people. I will be making this again soon. Thanks so much for a great marinade recipe!

Buttercream Icing

I needed a recipe for frosting cupcakes for a friends birthday and decided to use this. It was scrumptous!!!! I will never do store bought icing again. I varied from the recipe by using all butter, but followed everything else to a "T". It was so creamy and the taste was outstanding. Thanks for sharing!

This was very simple. I followed the recipe exactly, and it was great! Maybe high on the calorie side, but very tastey. It made plenty and leftovers for my household of 2. This would be great for a larger family. Serve with garlic bread and side salad. Thanks!

Linguine With Clam Sauce

I halved the recipe to make it for 4 servings. I wish I would have made the full amount of sauce though! This was sooo yummy. I used all of the butter and substituted olive oil for vegetable oil. I added red pepper flakes and parmesan as someone else suggested. Thanks for a great clam sauce recipe! This will be made often in our home.

Portobello Mushroom Burgers

This was great! I used dried Italian seasoning instead of seperate basil and oregano, and didn't have provolone, so I used fontina instead. This was so simple and delicioso! Also, used Kaiser rolls and toasted them on the grill as well. Garnished with tomato and romaine. Will definitely make again. Thanks!

Beth's Spicy Oatmeal Raisin Cookies

These were great! SO moist and flavorful. I had to add an additional 2 Tbsp of flour because I live in Colorado at a higher altitude so that my cookies did not come out flat. Send them with the husband on a skiing trip and he said everyone loved them. Thanks for the tastey recipe.

Spinach and Sun-Dried Tomato Pasta

This was really good tasting and has a light, healthy appeal. The only thing I would do differently is to cut the recipe in half. I made this for my husband and myself and we just had too much left over pasta. Other than that, this was simple and delicious! Will definitely make again. Thanks!

Pork Fried Rice for Two

This was really very good! It had a nice flavor with the 5 spice, but I also added brown sugar and soy sauce to marinate the pork as someone else suggested. I also added egg. It tasted very light and healthy, but definitely not bland! I wish I would have doubled the recipe for leftovers. I think next time I will add mushrooms and peas. Thanks for the great recipe.

Feta Chicken

My husband and I love this recipe! Instead of following the recipe exactly, I made these changes: 1) bought chicken breast cutlets, 2) bought garlic and herb feta cheese, and 3) bought sundried tomatoes in a jar. The cutlets come out perfect after 35 minutes in the oven and the garlic and herb feta give it extra flavor and you can cut up and add as much sundried tomatoes as you like. This was so easy to make, yet tastes so refined. Thanks for the recipe! It will be used the next time I have guests.

Chicken Stuffed Chiles

This was great! We tried this on an "indulgence" night, since we normally try to cut down on fat and eat healthier. It was well worth the extra fat from the cheese. It is a little time consuming, but definitely worth it. We used Anaheim peppers (6 of them by adjusting the serving size to 3) and used Pepper jack cheese for the chicken mixture, but used regular cheddar for the final 5 minutes. We also used canned Old El Paso red enchilada sauce. It was very tasty. Thanks for the recipe!

Almond Wild Rice

This was an awesome recipe. The only thing I did different was bake the brown/wild rice instead of cooking it on the stovetop. I took 1 1/2 cups of a brown rice/wild rice mixture and put it in a 8x8 baking dish. Preheat oven to 375. Bring 2 1/2 cups water or chicken broth to a boil on the stovetop and add to the rice in the baking dish. Cover with foil and bake for 60 minutes. The rice will come out perfect every time! Then I added the almonds and used dried cranberries. It was wonderful. Thanks for the recipe.

Baked Acorn Squash with Apricot Preserves

Made this to accompany a brandied shrimp recipe and baked brown rice with toasted almonds and cranberries. It was wonderful! I had to cook it for 60 minutes at 375 degrees so that I could make the rice and squash at the same time in the oven, and it turned out perfect. My husband was apprehensive about the squash but said it was his favorite part of the meal. Will definitely make again. Thanks!
