Mexican Casserole
About this Cook
I grew up in a family of cooks! My parents both shared cooking responsibility so it never seemed particularly burdensome. When I grew up and had to start cooking for my husband I found it very enjoyable. I love experimenting and cooking new things for my friends and family!
My favorite things to cook
Italian, not americanized Italian but real Italian, I love it!
My cooking triumphs
I have catered two family members' wedding rehearsal dinners. One I served Coq Au Vin and the other Chicken Fra Diavolo. The both turned out great and everyone loved the food. I was very proud of my self and happy to do it for my family!
My cooking tragedies
Shortly after I was married I was trying a new recipe, one that involved putting everything in aluminum foil. Everything sounded like it would be great, but when it was finished...yuck!! My husband and I wound up eating frozen quesadillas that night :(

Italian Pork Tenderloin
Great recipe, I have substituted chicken for the pork as well. It's a big hit!
