I guess these weren't what I was expecting. A little greasy - and way too sweet. Used sweetened coconut, probably shouldn't have. Recipe isn't specific. Might try it again with modifications. The kids love them.

Lite Coconut Cake

A Keeper! Used coconut milk in place of the water in the cake mix directions. Definitely better the next day. You can't go wrong with this one! Edit: Used coconut milk in place of the water, and for the whipped topping (1 1/2 cups heavy cream whipped with 1/3 cup sugar) then add the remaining cup filling. (Doesn't make it lite... but tastes soooo much better).

Potato, Broccoli and Cheese Soup

Great recipe. Pretty basic, but the kids loved it! Put in some crushed red peppers after the kids ate. That did the trick. I also put the broccoli in with the potatoes at about 9 minutes before the potatoes were done. Simple & yummy.

great cookie recipe. I used white chocolate chips instead, and part whole wheat flour. Good. Liked the addition of coconut.

Fluffy Pancakes

I was skeptical because this is similar to my usual pancake recipe. I followed it as written except for cut the vinegar to 1T. Very thick batter, but don't be tempted to thin it out. Yes... these are as fantastic as people review. I will be making these from now on for sure.

Creamy Peanut Butter Pie

Easy Sugar Cookies

Would give it 10 stars if I could. A huge favorite at our house. I watched them closely in the oven and took them out while they still looked underdone. Perfectly crispy edges with chewy center.

The Best Rolled Sugar Cookies

Great! Not too sweet. Soft dough - you MUST chill it, and keep it chilled. Warms up fast. Watch them carefully in the oven - and don't bake them too long. Take them out even if they don't look quite done.

Peach-Basil Sangria

Was ok. Was very sweet and I even cut the sugar down to 1/3 cup. Only added 1 can peach nectar - and even that seemed overpowering. Over all, it wasn't bad. Refreshing on a hot afternoon though. Think I'll hunt down a different recipe next time.
