Oatmeal Pancakes

"Mom, you make the best pancakes!" I hear this every time I make these! - I like them because they are so quick. I originally posted this recipe. I now make them in my Magic Bullet. I also omit the baking soda and just use 2t of baking powder.

Italian Sausage Soup

So good! I left out the zucchini only because I didn't have any. Added an extra 2 cups of broth (I used vegetable broth, because that is all I had). Was fantastic! Bet the leftovers will be better today - but I missed out on them, Hubby already took them with him. Definitely a keeper! Great because you can adjust it to what you have on hand. Thanks so much!

Juicy Roasted Chicken

I was skeptical because of the simplicity of this recipe.... but I will never do a whole chicken any other way again! It was fantastic! My kids literally picked it clean - leaving no leftovers. I used butter instead of margarine and tucked pats of butter everywhere I could. Thanks for such a simple recipe.

One Bowl Chocolate Cake III

This didn't work for me. It came out flat.... I mean really flat! It was only about 1" thick (didn't rise at all). I had wanted a "dense" type cake - but this came out more dense than even brownies. All I can figure is I must have done something wrong - but in going over it several times, I just can find my mistake. Glad it works for most everyone else. Wont be re-trying this one. I'll go back to the recipes that include sour cream and pudding.

Molasses Bran Muffins

Really good. If you use paper liners, make sure you let them cool completely or they will stick. I used applesauce in place of the oil. I added frozen blueberries, but will leave them plain and add some cinnamon next time. I brushed the tops with honey - as another reviewer suggested. These are super moist. Will be making these often.

Healthy Turkey Loaf

We are on the Zone diet for crossfit and this was perfect. I used about 3/4lb. ground turkey. Only had green pepper, but will use red and or yellow next time. Used fresh bread crumbs (and only about scant 1/4 cup). Baked for about 40 minutes. Plated it with fresh spinach. Yum. My husband said it was his favorite "zone" meal.

Stephen's Chocolate Chip Cookies

These were great - although I think I will make them into balls and freeze them to bake as needed. They seemed to flatten out more than I like, but my family didn't seem to care - it was just me. Love the dark and milk chocolate together - along with the different nuts. More like a gourmet chocolate chip cookie.

Pretzel Turtles

Love these. Love the salty/sweet. Melted a few white chocolate chips in the micro and drizzled over them after they were cool. (Must let them cool completely or you will have a mess!) Great for Christmas cookie platters. Even the kids helped with these.

Honey Peanut Granola

Very good - and versatile. I cut the brown sugar to 2 tbsp. and the honey to 1/4 c. Only toasted in the oven for about 45 minutes. Wasn't too sweet (mainly because I cut the sweetness myself) but it was perfect. Even my kids ate it right out of the oven by the fistful. Might try almonds - or whatever I have on hand next time. Maybe some dried fruit or flaked coconut too.

Cream Cheese Pie

Absolutely fantastic! My 14 year old daughter made this for us for dinner and company the other night. It was the best cheesecake we had ever eaten. It was much lighter than regular cheesecake, and much easier to prepare. She topped it with Supreme Strawberry Topping on this site - and it was perfect! My Mother-in-law and I both requested that this be our birthday cake this year.

Will be making this regularly during the holidays. Double this for sure - if you are having company. Kick it up with a shot of brandy when serving. Puts it over the top! I used an inexpensive red wine (zin) and it was perfect.

Asian Lettuce Wraps

No need to go to PF Changs anymore. This is so good. We used chicken thighs instead of ground beef. (I ground them in my kitchen aid.) Also added a little bit of ground pork (only because I had some left over from spring rolls.) Will absolutely be making this on a regular basis. So good!

Chocolate Truffle Cookies

This was a tricky recipe. Dough was sticky even after chilling overnight. The first tray I undercooked a bit - and I was convinced I'd never makes these again. The second tray I left in the oven a bit longer (total 10 minutes). I let them cool completely on the tray and they came out so much better. A very flat cookie - kind of runny in the oven - but yummy none the less. Might make these again, put a little espresso powder in with the dry ingredients and freeze the balls of cookie dough before putting in the oven.

Honey Garlic Vinaigrette

Our new favorite dressing. Can't believe how easy and how few ingredients are in it. I usually make a 1/2 batch using 2 T of both vinegar and honey. Goes super on a salad topped with strips of steak, blue cheese and sugared walnuts. YUM!

Iced Pumpkin Cookies

Made these with the thought that my kids would turn their nose up and not even try them. It probably was the icing that tempted them, and much to my surprise the loved them! Even had to send a few home with a little friend that was over. The kids begged for another after dinner. I will have to make another batch later this week - and some for Thanksgiving. Thanks for the recipe! Didn't change a thing accept baked them for 12-13 minutes.

2 Thumbs UP! Made this exactly as recipe stated (except used meatballs instead of sausage). I can see this becoming a "staple" in our house. Especially when I have a houseful of growing kids and all their friends. So many possibilities and options - a great recipe to "tweek". Easy way to use up leftovers! Thanks
