Tater Tot Casserole III
I thought this was really satisfying. I sauteed some shallots in olive oil before adding in the beef. I seasoned beef with S&P, garlic powder, and then stirred in only 1/2 cup milk, and the soup. I used Campbells Low-Sodium Cream of Mushroom soup. I used broccoli instead of green beans, and sprinkled extra sharp cheddar on top of the tots. Yummy!

Apple Crisp III
I was skeptical to try this, as I grew up on a recipe that used oats and I adored it. However, I was out of oats, so I gave this a try. I am glad I did! I was pleasantly surprised at how good it really is. I DID CUT DOWN the water to 1/4 cup, and I have to say that I will cut it down again, as I found it was still too soft and watery for my liking. I raised the heat to 375 and baked for 30 minutes. I also used pumpkin pie spice in place of the cinnamon, and I loved the complexity the additional spices added. Will make again!

Cold Macaroni and Tuna Salad
good starting point. in place of table salt, i added simply organic all-seasons salt (which consists of sea salt, paprika, cane sugar, garlic, onion, celery, oregano, & tumeric), and used minced shallot for a milder flavor than white or red onion. in the past i have also used less of the all-seasons salt and added a few TBS of ranch dressing. yum!
