Feta and Turkey Stuffed Green Peppers

Very good recipe, even my kids liked it. The only change I made was to use less fennel. I thought the rosemary and thyme that was recommended was the perfect amount. I really liked the feta cheese in this recipe. Will definitely make it again.

Stuffed Peppers

This was a very good recipe. I did saute one onion and 1 tsp. garlic and used turkey. I took advice from another who boiled the peppers 1-2 min. then put them in cold water. I also added 1/2 can italian tomatoes to the meat mixture and used the remaining can in the tomatoe sauce on top. I did not however put all the sauce on top of the peppers because I thought is would be too soupy. I just put a little on each pepper and the remainder in the bottom of the pan. It is not necessary to baste the peppers. You definitely need to cover the peppers and then uncover for the last 5 min. while the cheese melts. My husband and kids loved this and I will definitely make them again. Thanks

This was pretty good it was a little too moist in the middle when I took out of oven so I had to cook a little longer. Definitely need syrup with this.

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins

These were very moist muffins. I did take the advice of others and used applesauce instead of oil, brown sugar/splenda, 1egg and 1 egg white, 3/4 tbsp. cinnimon, 1 tsp. allspice, 1 tsp. baking powder, 1/2 cup oatmeal. I also used fresh strawberries and it turned out just fine.

Glazed Cinnamon Biscuits

My family really liked these cinnamon biscuits, but they are more of a cinnamon roll. I did make a couple of changes by using 1 cup whole wheat flour and 1 cup all purpose flour. I added 3 tbsp. of splenda or sugar to the flour mixture. I also cut in 4-5 tbsp. of applesauce instead of butter which comes out great and I like to use half splenda and half sugar to make this a little healthier. They turned out wonderful. I will definitely make them again.

Homemade Banana Pudding Pie

I thought this recipe was pretty good. I do think that 1 1/2 cups of sugar is way too much. I only used 1/2 cup and it was fine. I must say that I do like it much better when it first comes out of the oven rather than chilling it first.

Cinnamon-Sugar Fan Biscuits

My family loved this recipe! It was very confusing however to me as to how you arrange them in the muffin pans. I rolled up the dough, jelly roll style, and cut them to turn out more like a cinnamon roll. It turned out great. I also used 1 cup whole wheat flour with 1 cup of regular flour, 1/2 cup applesauce and 1/2 tbsp. butter in place of the shortening. This made it more healthy and my kids didn't even know the difference. I will definitely make them again and possibly use a little more cinnamon sugar. Thanks

Sauteed Apples

this was a very good recipe; however, I will definitely cut back on the butter. I used 2 tbsp. of butter and I could really taste it. I will probably only use 1 tbsp. next time. If you use sweet apples, I would cut back on the brown sugar. Other than that my husband and kids really liked this. They think it would be great on some vanilla ice cream. Thanks

Oatmeal and Wheat Flour Blueberry Pancakes

This recipe was very good, however, I made a few changes to give it a little more flavor. First of all, I ground up my oatmeal and I replaced the oil with applesauce. I think next time I will use 1 cup of whole wheat flour to make it healthier. I also added 1 tsp. vanilla, and 1/2 tsp. cinnamon. My husband really enjoyed these pancakes. I will definitely make them again. Thanks

Pecan-Oatmeal Pancakes

My husband and I loved this recipe! I did make a few changes though. I ground up my oatmeal which turned out great. I also used 1/2 cup of whole wheat flour and 1/2 cup regular flour. Next time I will use 1 cup of whole wheat flour. I also used soy milk instead of regular milk, and I replaced the butter with applesauce to make it healthier. I added a few more nuts, I used walnuts, and it came out great. I will definitely make this again. Thanks

Banana Oat Bread Pudding

This recipe was good. I did make several changes as recommended by others. I used applesauce instead of butter. I soaked the bread, oatmeal one mashed bananna, 1 tsp. vanilla, 2 tsp. cinnimon in frig. for at least one hour. I also chopped banannas instead of slicing them. I also sprinkled on 2 tsp. sugar on top before putting in oven. much better.

Broccoli Potato Bake

This was a very good recipe that my husband and kids enjoyed. I did change a couple of things like adding onions and garlic with the butter in the first step. I also used fried onion rings of the top instead of the breadcrumbs because my kids love those. I did not use the frozen hash browns I used baking potatoes. I did find that with the potatoes they needed to be in the oven longer than the 35 minutes. I will probably make this recipe again.
