Cinnamon Rolls II

Reviewed: Nov. 10, 2008
Great recipe. This is my first time making Cinnamon rolls from scratch and i think this recipe is pretty forgiving. I used a stand mixer but the more I kneaded it in the mixer the stickier it got so I added almost another full cup of flour. I thought I would end up with hard bricks but i didn't :-) I only let them rise once after cutting and placing in the pan but i made sure it was a 2 hour rise. worked PERFECTLY. fluffy, soft cinnamon rolls. I'm pretty proud of myself :-)

Delicious Rosemary Bread

Reviewed: Mar. 11, 2008
I would give this bread 10 stars if I could. what a gem!!! Candice, thank you for sharing. I usually make "artisan" type breads and they take quite a while to prepare. This bread gave the taste of those artisan breads in literally half the time (and effort, phew!). This is by far my favorite bread recipe and also, I've tried it with and without rosemary, and it's great either way. LOVE it!

Black Cat Cookies

Reviewed: Oct. 30, 2006
A Very easy and yummy cookie! These took no time at all and were delicious. The batter is thick and I agree with the other reviewer kind of mousse like or fudgey. The cookies are more cake-like which for me was a bonus. I shaped them with the bottom of a glass and found it made perfect little "faces" because the edges curled up slightly. I too used M&M's for eyes and red hots for noses (couldn't find candy corn at the store) Just adorable and again, so easy.

Grandma Johnson's Scones

Reviewed: Aug. 25, 2006
I reviewed this recipe about a year ago and loved it then just as much as now. I had to add that now that I've purchased a large 14 cup food processor this is even easier to make. Much easier to cut the butter into the flour mixture. Then I plop it into a large bowl and stir in the wet ingredients with a wooden spoon. I agree that handling the dough as little as possible is probably key. I also divide the dough on a large round pizza pan and refrigerate for 30 minutes before putting them in the oven. I've made this recipe countless times and those little tricks seem to make them even fluffier (I'm sure some more experienced bakers already know this lol but I'm still learning). I have added 1/2 cup of canned pumpkin, and sprinkled the tops with pumpkin spice and sugar with great results but usually I only sprinkle with sugar and cinnamon. When my husband and his friends work a 6 day week I like to make these for them (they deserve a treat!). It makes me happy when they ask him if he's brought their "breakfast". Thank you for this great recipe!!!

Baked Pancake Squares

I liked this, but didn't love it. Its very easy and if i do make it again I will add blueberries or something. It was a little plain and not "pancake"-y" tasting. I guess I was expecting a bit more.

The All-Good Loaf

Reviewed: Jun. 15, 2005
I think this might be a misprint. I added 1 Tablespoon of honey since I felt it needed some sugar for the yeast (maybe I did not add enough). Anyway, I did not add any rosemary since I was after a healthy bread and don't really care for rosemary other than in stew :-) I got a dense, rather hard loaf of bread. I will try it again though with some dough improver. I liked that it included Quinoa flour since I'm trying to find ways to use that.

Granola Bars III

Reviewed: May 3, 2005
Just an excellent recipe. I've made it exactly as written and its awesome. I've substituted 1/2 the oil with apple sauce and its great too :-) I've made it with the additions of 1/2 cup bran cereal, whole wheat flour instead of all purpose, 1 cup of flaxseed meal, and the list goes on. This recipe is a great starting point for making up your own granola bar :-) If it ever gets too dry I just add a bit of apple sauce or a little extra oil. Thanks for this recipe Ilene!

Easy Granola Bars

Reviewed: Mar. 27, 2005
I really like this recipe and have made it many times now, because both my husband and I take them to work. The first time I had a hard time getting them out of the pan, so now I line my baking pan with wax paper. MUCH easier :-) I also add 1/2 cup of flaxseed meal to make them a bit healthier.

No Roll Pie Crust I

Great Pie Crust and So easy! I used this as a crust for a last minute quiche and was amazed at how flaky it was. I used safflower oil since I did not have any peanut oil. I will definitely be making this again. Thank you Karin

Oatmeal Dinner Rolls

Reviewed: Feb. 24, 2005
wow! what delicious rolls! I changed this to 24 servings but actually got 16 large dinner rolls. I made the oatmeal, and cooled it to room temperature, then layered the ingredients in my bread machine. I also added about a tsp of bread improver (not sure if it needed it or not). I used the dough cycle through the first rise, then shaped by hand and let the dough rise again. These were so easy and are just as perfect as can be!

Honey Of An Oatmeal Bread

Reviewed: Feb. 23, 2005
Great recipe, i found it very easy for such a delicious bread. I prepared this is my bread machine using the dough cycle only, then shaped the dough into rolls, letting them rise again for 30 minutes before baking (350 for about 35 minutes). I usually make bread this way since we really only eat it with salads or soup anyway. These were really good with a little butter and brown sugar. Thanks Merrilee :-)

Authentic French Meringues

Reviewed: Feb. 19, 2005
Very easy to make. I only used 1 3/4 cups of sugar, added unsweetened cocoa while beating in the sugar, and I folded in about 1/2 cup of semi-sweet chocolate chips before dropping onto the cookie sheets (i don't have a pastry bag :-) Too bad these take so long to bake because I COULD eat them every day :-) Thank you for this recipe Randy.
