Fry Bread Tacos II

I am truly sorry, but the fry bread was not very good at all in my opinion. Nothing like fry bread I have had at fairs and so on. It was dry and not fluffy or crispy. Seemed like a fried biscuit. Just totally not what I was looking for.

Beer-Batter Onion Rings

GREAT!! Works wonderfully with mushrooms as well. Probably would work with anything you wanted to batter. I made myself a little short cut and it was still the best batter I have used. I skipped the step of rolling the onions in the plain flour, went straight to the batter and it was THE BEST!!

High Temperature Eye-of-Round Roast

I had previously rated this a 5 star, because it is very good. However I have found it to be inconsistent. I have made this 4 or 5 times now and never as good as the first time. I think if your roast is 3 pounds but long and skinny you need to cut down the time in the oven. Anyway, be careful because it can easily become dry and over cooked. Still very good when it turns out right.

Hot Bacon Dressing

Juicy Roasted Chicken

This is an excellent roast chicken recipe. If you happen to be out of celery, you can stuff with onion, orange, etc. Anything that has a lot of moisture will work. Very easy and very good.

Pork Marsala

This was pretty good. I would suggest using a more tender cut of pork, or maybe mine just wasn't very tender. I prefer a cream marsala sauce. But this was good and I will make again, probably use chicken however.

King Ranch Chicken Casserole III

Did not have a lot of flavor. Also I used less than half the broth that was called for and that was a little too much. If anyone else has the same experience I'll tell you what I did with the leftovers. I took a smaller casserole dish and layered the original recipe, then sour cream, chopped canned chile peppers, black olives and I added cumin and ground red pepper. Added cheese just before taking it out of the oven. NOW it was very good.

Bou's Chicken

I was very disappointed in this recipe. The sauce was very watery, and the breast portion of the chicken very dry. We did eat it, but will not make it again for sure. There are much better things you can do with a chicken. Sorry!!

David's Mesquite Smoked Texas Brisket

I have made this many times and it is always wonderful. I use a gas grill with wood chips and have caught the whole thing on fire a few times. It actually turns out just as good or better. I also use salt free greek seasoning and season all so I can control the amount of salt a little better. Again this is awesome and I make it as often as I can.

Amy's Cilantro Cream Sauce

At first I loved this sauce, but I think I put a little too much lime in it and a little too much on my chicken. My husband did not like it at all. Next time I will use less lime. I think this would make a great salad dressing.
