Aunt Mary's Vanilla Frosting
I enjoy this recipe. Those that gave it fewer stars must be wanting something sweeter. I found this to be more like the fluffly light icing you get on a Wal-Mart cake. Although I do think it requires more sugar than the recipe states. I don't use shortening either instead all butter and that could be the reason for needing extra sugar. OH and probably extra vanilla wouldn't hurt either ;) It takes a while to take form, it's not instant so just keep mixing! It's fluffy, light and yummy ;)

Fiesta Fry Pan Dinner
I really enjoyed this recipe, quick and simple! Love that you can add extras without ruining any flavor! I didn't use taco seasoning instead opted for my own which included flour, beef stock, chili, cumin, paprika, garlic, sugar and salt. I used stir-fry beef instead of hamburger and a can of Mexican flavored chopped tomatoes too. I also used regular rice and you just cook it for 15-20 minutes instead of the 5 for the instant. I added 200g of frozen corn, a tad more than stated. Once it was finished I topped with the cheese and some black olives. I can see how so many other things would be yummy in it too like kidney beans, black beans, crushed tortillas, avocado, etc. We also topped with sour cream! Kids loved it! I could do more spice but the kiddos aren't that inclined at their age lol. Totally making again ;)

Apple-Raisin French Toast Casserole
Yummo!!! I'm not sure about some of the other reviews but I had no problems with this recipe. I tried it exactly the way it was written to *see* for myself how it turned out. The only thing I omitted was vanilla because I had none and I added a bit of nutmeg and probably more cinnamon then it call for lol. Other than that, that was it! It was sooooooooooo yummy!!!! OMG, I couldn't get over the taste! Totally not too sweet which I kinda worried about with the brown sugar and apples. I even splashed it with maple syrup afterwards but didn't need it. I did cook this at 200C for 40 minutes uncovered. I don't like my French Toast dried out, not how it should be, so it was perfect; moist and spongy ;) I also let it stand the extra 5 minutes, could have stood longer only cause it holds the heat. The other thing is FYI NZers: I only used 24 slices of French bread cut between 1-1.25 inches in thickness. I think our French sticks must be denser cause I weighed out a pound but was too much. Totally recommend giving this one a go ;)
