Jambalaya
I made this last night and used olive oil in place of the peanut oil. Also, I used boneless chicken thighs in place of boneless chicken breast. Lastly, I added a can of red beans (drained). My significant other thought it was good, but a bit too spicy. Next time, I will use only 1/4 tsp.of the red pepper flakes and hot pepper sauce. I will definitely make this again-it goes great with garlicky greens!!
