Artichoke & Spinach Dip Restaurant Style

Served this at a party and it was a big hit. Like others, I used a whole brick of cream cheese rather than half. I used Classico Alfredo Sauce but would like to try Bertolli to see if that makes a difference in the taste. The Classico seemed a bit mild so I added more parmesan cheese to the dip. I mixed all of the ingredients together, rather than layering as the recipe says. I made the dip the night before and kept in the fridge. I cooked a little bit longer than 30 minutes since the dip was cold. Served with pita chips and wheat thins. This one is a keeper!

Roquefort Pear Salad

Excellent salad! I used hearts of romaine instead of leaf lettuce. Made the dressing a few hours ahead of time and kept it in a shaker. Used dijon mustard instead of regular mustard. Take dressing out of fridge about 30 minutes before serving so it mixes well. Careful putting the candied pecans on waxed paper as the waxed paper will stick to them. A cookie sheet sprayed with Pam worked better for me.

Spicy Lime-Cilantro Marinated Flank Steak

I tried this on round steak, as it was all I had in my freezer at the time, and wasn't sure how it would turn out. It was amazing! I marinated it over night and it was so tender! It was perfect for fajitas. We've also tried this on chicken and it was great.

Baked Asparagus with Balsamic Butter Sauce

This was SO good! I also took the advice of others and did 2 tablespoons of the balsamic and 1 of the soy sauce and browned the butter. You will want to double this recipe because everyone will love it so much. We also put this on our steak and it was amazing. Such a simple but flavorful sauce. This one is a keeper!!

Penne with Spicy Vodka Tomato Cream Sauce

I really liked this recipe. To cut down a bit on calories we used sweet turkey sausage and half and half instead of heavy cream and couldn't tell the difference. I also used dried parsley as I didn't have fresh on hand. I used canned chopped tomatoes instead of crushed. My kids loved it! Next time I may add another smaller can of tomatoes to make more sauce because it is SO good! I will definitely make this again!

Roasted Lemon Herb Chicken

This was very good and so simple to make. Loved the flavors. I cooked mine in a roasting pan that had a wire rack, to allow the drippings and olive oil to run off, then used the juice to baste the chicken. I had a larger chicken than the recipe called for, about 6 lbs.,but did not double the recipe and the amount worked just fine.

Marzetti® Red, White and Blue Slaw

A really nice change from typical coleslaw recipes and so easy to make. I also cut down the amount of dressing and just added a little at a time until I was happy with the consistency. Everyone loved it!

Hot Mexican Spinach Dip

Really good! Made this for a party and everyone wanted the recipe. I used a crockpot rather than baking. Instead of just salsa I used a can of Rotels and some salsa. I did not use the evaporated milk but added a little regular milk to thin it up as needed. I also added more cheese than it called for. This is a great spin on hot cheese dip. I will definitely make this again!

Double Tomato Bruschetta

This has been an instant hit at every party I have served this at. A few suggestions...when I don't have really good ripe tomatoes available I will substitute with 1 can of chopped tomatoes (Italian style works well) and I will add some chopped grape tomatoes to add some additional texture and flavor. Make sure you drain the canned tomatoes really well. I agree with some of the other reviews that using fresh basil is much better than dried. I have also used the sun dried tomatoes packed in oil and those that are not and both tasted good to me. I would definitely make ahead to allow the flavors to infuse. Just a really great recipe!

Awesome Sausage, Apple and Cranberry Stuffing

This recipe is wonderful! All of my guests raved about how good the stuffing was. I have never been a big fan of stuffing but this one is a keeper. I used fresh herbs instead of dried but pretty much kept to the recipe. It came out very moist and very flavorful.

Taco Pie

VERY good and so easy to make! My four very picky children and husband all loved this dish. I used a 9 x 13 pan instead of square pan. I used half of the sour cream and I didn't add the tortilla chips until the last 5 minutes of baking. I served lettuce, olives, tomatoes and salsa on the side and let them pick what they wanted to put on. I used reduced fat crescent rolls, light sour cream and lean hamburger to cut down on the calories and fat. Thanks for the great recipe!
