Slow Cook Thai Chicken

Made this for a family dinner tonight and EVERYONE loved it! Will definately make again, but might need a few tweeks. Some added spice to theirs, others thought it was too peanuty, but all liked it overall.

Chicken Satay

My guests raved about these! My girlfriends do a different ethnic food every week and we play around with new recipes. This week was Thai food and these were the first items to be eaten! I did use the red chile saracha (sp?) sauce instead of regular hot sauce.

Marshmallow Fondant

This was my first attempt at official cake decorating...ever. Let alone using fondant, so very scary. I followed other reviews and greased my KA w/ crisco and it worked perfect. My assembly of the cake leaves a lot to be desired, however the fondant itself turned out better than expected for a complete rookie and it tasted much better than storebought. I will definately try this recipe again to see if I can improve my skills.

Buttermilk Pancakes I

These were so easy to make and so delicious. Very light and fluffy. Half way through eating them, my husband (whom doesn't comment on anything I cook) perked up and said "these pancakes are REALLY good!" That made my day! Plus, the ease of making them made it so much better.

Easy Slow Cooker Chicken

This was awful. The chicken turned out tender but that was the only good thing about it. Very bland. I used cream of mushroom, cream of broccoli, and a can of chicken broth. From the other reviews I added a few other spices such as garlic powder, pepper, and a splash of white cooking wine. It still had very little flavor and it served up like slop. I used instant rice and 1 cup wasn't enough. I'm planning on rinsing the sauce off the leftover chicken and making something else so as not to waste all this chicken.

Brown Sugar Meatloaf

This was the best meatloaf I've had in years! I followed others advice and made meatloaf cupcakes in order to speed cooking time (and made it easier for serving to my 2 year old). I did put sauce on top AND bottom as suggested and I added worstechire sauce to the sauce.

Molasses Cookies

These turned out sooooo flat I don't know what happened. I did use butter in place of margarine, but I have never found that to make that much of a difference. After my 1st batch didn't turn out I chilled them overnight and tried 2 more batches and they all turned out thin and crispy, not what a molasses cookie should be. I ended up throwing 1/2 the batter away.

Non-Edible Cinnamon Ornaments

These were pretty easy, but I only gave it 4 stars since these definately need more applesauce than it calls for. I rolled them out on wax paper and after the 1st batch, they were so dry and crumbly I couldn't get any more out of the batch. I ended up with only 5 useable ornaments. Good basic idea and my 2 year old enjoyed it.

Easy Sausage Strata

This was so easy and very good. I used turkey bacon in place of the sausage. Next time I would not add any additional salt as the bacon was salty enough. Also, I wasn't sure whether to cook it covered or uncovered since it didn't specify. I cooked it covered b/c I didn't want to burn the cheese and it was a bit soggy in the middle..cooked but soggy. So next time I might uncover it for the last 15 min or so to try to firm it up a bit as my family prefers our eggs very well done. Definately try again for company.

Chocolate Eclair Dessert

My mom used to make this recipe years ago before it had an official name, but this is the exact recipe she used. This has always been my favorite. A little tip though, you have to make it a day ahead, possibly even two and it is just that much better.

Best Big, Fat, Chewy Chocolate Chip Cookie

I would give this recipe more than 5 stars if I could. I have been making these cookies for about 2 years now and I finally am giving it a review. I have received SOOOO many compliments on these cookies. People actually don't believe they are homemade...seem like Mrs. Fields cookies. Just a hint, you can totally substitute all or partial Whole wheat flour if you want. I think it works best with 1/2 white flour and 1/2 wheat if you do choose to substitute. Definately try this recipe, you won't be disappointed!!!!

Fiesta Fry Pan Dinner

This was really delicious. My picky picky husband even went back for seconds! I was short on time and ingredients so I left out the zucchini and onion, but it was still great without it. Will definately try again.
