About this Cook
Just relocated from Hawaii to Washington (long story) and have finally acquired a decent size kitchen. On top of that, I have a hungry boyfriend who appears to enjoy my cooking, so I am always looking for awesome new recipes to try out on him (he doesn't mind).
My favorite things to cook
I love international cuisine - I'm trying to learn as many different ones as I can. But I love cooking Tex-Mex too - I grew up on it! I'm getting back into baking as well - my boyfriend just bought me a stand mixer and I'm starting to think its a ploy to get me to make him cupcakes....
My favorite family cooking traditions
Whenever my Mother makes Pico de Gallo everyone crowds around and it gets devoured within minutes! Whenever we visit we're like "Where's the Pico?" Also my late Grandmother's chocolate chip cookies. There were usually several batches available on a daily basis when we would visit :)
My cooking triumphs
My Tex-Mex is pretty good, I think. I heap on tons of fresh vegetables and make it spicy as possible because that's how I like it. I make the chunkiest queso in town LOL. I made fettucine alfredo from scratch the other day, with peas and prosciutto, as well as a lasagna, and they were both delish!
My cooking tragedies
I tried to make Brioche once. It's a sweet tender french bread. Came out hard as rocks and I had to dump it in the trashcan. I also made a dinner for my Father's birthday...Cappellini Pomodoro and I made way to much pasta wich lowered the flavor dramatically...along with Lemon souffle's which looked beautiful, but nobody like them anyway LOL.

Salad Dressing Cupcakes
These were very good. The texture was not quite what I was expecting, but it tastes very good, and kept very moist. I was leery because of another comment about the smell. I hate mayo (or any version of it) which is why I wanted to try these so I could get rid of a large jar of miracle whip I bought (to make potato salad). While combining the wet ingredients I definitely was put off by the smell. However, I found that once the flour and cocoa were mixed in it just smelled like regular cupcake batter. I will probably use this recipe again - it was VERY simple and yielded good results :)

Quick and Almost-Professional Buttercream Icing
A great buttercream - I added some cocoa and it was heavenly. My only problem is putting the cupcakes away and not eating them all!

Peach Pie the Old Fashioned Two Crust Way
I didn't care for this. It was so liquidy that the crust was soaked through after sitting for one day. I had to throw most of it away. What I did eat was ok, but I wasn't crazy about the flavor. Boyfriend didn't really like it that much either, and he will eat just about anything with sugar in it.
