Crab Canapes

Very rich! I used pepperidge farms pastry sheets cut into squares per another reviewer's suggestion. Will try pillsbury crescent rolls next time to compare.

Crab Ceviche

Really flavorful! We used fresh dungeness crab and used only 2 peppers as it had plenty of heat for us. Avocado is a definite must have addition! Will become a regular keeper for when we go crabbing! Thanks!

Connie's Zucchini 'Crab' Cakes

Really good way to use up zucchini from the garden. I didn't dredge in flour first and they turned out great! Served with either lite sour cream or applesauce. Used shallots instead of onions and added some parmesan. Will make again and again until zucchini season is finally over!

Raspberry Almond Coffeecake

I made 2 batches of the dough and prepared the cake in a 10 inch springform pan. Increased the raspberries by about 50% (and brown sugar). Turned out really well!!! Next time I may add a bit of almond extract to the dough to make it more almondy (is that a word?)!

Mexican-Style Taco Salad

I used 1 can of chili beans with 1 tsp. oregano and a pinch of cayenne, instead of the kidney beans and spices. All the rest was the same as written. It was very tasty! Also good the next day as chili with cheese and corn chips! Will use this a a regular addition to our weekly menus. Good recipe!

Apple Raisin French Toast Strata

Was good, but a bit bland. Will try it again with cinnamon swirl bread and fewer raisins but add pecans on top. Might try adding a splash of rum and serve it for dessert. Great potential!

My Mom's Parmesan Chicken

Made this with chicken tenders and they were a bit dry (due to the meat, not the recipe). Didn't use the wine, and only used 1T. butter. Used panko instead of bread crumbs. Very good recipe. Would be great with fish (halibut, rockfish) as well. I bought some boneless chicken thighs to make it again tomorrow. They should be more moist than the tenders. Will definitely keep this as an easy go to recipe. Thanks!

Spinach and Orzo Salad

Great potluck recipe! Makes more than 8 servings, I'd say more like 10 servings. Needs ~1 tsp salt as well as fresh ground black pepper. Added artichoke hearts and olives as per others' suggestion. Used less oil and vinegar (maybe cut down by 25%). Would be great vehicle for other veggies as well (blanched broccoli, zucchini, etc.).

Spanakopita (Greek Spinach Pie)

I use 1/2 of an onion and use one of those large plastic tubs of spinach. Definitely need to squeeze out the water! I also add a bit of dill and nutmeg to the spinach/egg mixture to add flavor. Very good and fun to make!

Really good, but too sweet as written! I use 1/4 cup sugar instead of the 1/2 cup called for. Also blanch the broccoli first to make it more tender. Great for potlucks and large gatherings!

Grilled Chicken Thighs Tandoori

Really good! I cut the skinless thighs into 1" chunks and marinated 2 hours, then threaded them onto skewers for grilling. Omitted the cloves and cinnamon and added cayenne to suit my taste. Will make this again and again!

Mulligatawny Soup I

This is the original recipe from the Joy of Cooking! Always been a great favorite in our family. Instead of cooked rice, I add 2-3T of uncooked rice just after adding the chicken broth. Ends up with just the right amount of rice! I often omit the cream and add a squeeze of fresh lemon to each bowl.

Roasted Squash Soup

Really good!! I upped the curry powder and ginger and added a squeeze of lemon juice at the end. Served it with a dollop of sour cream in each bowl. Definitely a keeper!
