Yummy Pork Chops
This was just wonderful! It would make a great, but easy company dish. Unbelievably, pork tenderloin was cheaper than chops at the store today. I cut it up into medallions and seared them in some olive oil. I removed them from the pan so I could put 1/2 of a cut Vidalia onion in the pan. Then I replaced the pork, covered with the sauce (to which I added about 2 tsp of minced garlic) and let it cook covered 25 minutes on medium heat. My husband agrees that this is a definite keeper! Thanks for the recipe.

Lemon Poppy Seed Dessert Cake
This was a great, light tasting alternative for a holiday meal. I followed a few reviewer suggestions and substituted some apple sauce for 1/2 cup of the oil. It was a delicious cake, and I was already asked for the recipe. Thanks, and I will make this again.

Scalloped Potatoes and Onions
These were very good - easy to make, and the results were what I expected. The only adjustment I made was using Smart Balance margarine and mayo, otherwise I followed the recipe. They cooked in the same amount of time as my Easter Ham. Will definitely make again for a special occasion.
