Slow Cooker Scalloped Potatoes with Ham

I doubled the cheese & ham; increased the soup to 1 1/2 cans to make it creamier, used milk instead of water. Then after mixing all together into a 9x13 pan, baked it in the oven for 45 minutes covered followed by another 15 minutes after the cover/foil was removed. Smelled so good!

Shrimp Fried Rice II

Good! I omitted the salt. Added frozen mixed peas & carrots, 3 cloves of garlic and diced water chestnuts. I've made fried rice before and I always scramble the eggs before adding to the rice mixture otherwise well - yuck!

Fish Fillets Italiano

It was ok. We decided not to make it again. Maybe it was us? I served it on fried rice and maybe the combination of the two just wasn't working.? I followed the recipe except I only used 1/4 cup wine and added 1/4 cup broth. (Maybe we should have left the wine out totally - not OUR favorite.) We doubled the garlic & added a touch of cayenne pepper and itailian seasoning. It should have been good...maybe without the wine?

Seafood Fettuccine

EXCELLENT! I halved the recipe, except the garlic-remained the same, and added fresh mushrooms and a bit of cayenne pepper. I utilized the optional cornstarch to thicken. My daughter is a connoisseur of the dish at any restuarant she comes across that serves it: Olive Garden, Chillis, etc. She said mine was just as good as her favorite at Olive Garden....if NOT better!

Simple Country Ribs

This was a excellent method to prepare good, tender ribs. However, I did not put the BBQ sauce in the pot with the ribs, rather, I just used water to cover, salt, pepper & minced onion to flavor the ribs while simmering/boiling. Since it was raining, we put the ribs in the oven rather the grill. That is when I douced the ribs in BBQ sauce and cooked them for 45 minutes in a 350 degree oven. ~Simple!

Ham Salad Spread

Really EASY to make and a QUICK sandwich to GRAB and GO! I used my KitchenAid Food Processor and it made it so simple that it was even FUN to make. I did make a few adjustments: *More Onion - I added a whole onion. *Less Mayonaise - This may be due to the fact the the food processor is so powerful it all but makes it spreadable even before you add the mayonaise; I added about 1/2 c mayo.

ABSOLUTELY THE BEST! Everybody has their own favorites to add to potato salad but this receipe has the best "base" for you to customize to your own preferences. I left out the pickle relish and garlic.

Pasta e Fagioli III

I included two cans of chicken broth for part of the 10 cups of water. Then I put all the ingredients in a crock pot (except the noodles) including two cans of cannelli beans (instead of steaming beans) and slow cooked for six hours. It was good, but not great. Needed more flavor.

Awesome Sausage, Apple and Cranberry Stuffing

I liked it but the family prefers more of a traditional stuffings WITHOUT the fruit (apples & cranberrys) so unfortunately there was alot that went to waste. (Thanksgiving 2006)

Grilled Salmon I

My teenage boys thought it was OK. The marinade smelled good as I was preparing it so I was really looking forward to it. I cooked it in foil packets in a 425 degree oven for 15 minutes. But it was just OK, maybe you just have to be a bigger Salmon fan then we are to appreciate it.

I think the boys really liked it. I didn't use the beer and the chicken breasts were placed into the crock pot from a frozen state. It was REALLY simple and the leftovers were ALL eaten up!

Marie's Easy Slow Cooker Pot Roast

No need to brown the roast (I have done it both ways). I used my medium size crock pot w/ a 2.65# boneless Chuck Roast, rubbed it with Red Robin Seasoning & sprinkled w/ Salt & Pepper. Put 1/2 package of Onion Soup Mix on it, poured 1 cup hot water, added 3 lg potatoes & as many baby carrots I could still allowing 1-2" clearance from top of crock as it is IMPORTANT you don't overfill your crock pot for proper cooking. (Makers' suggest on filling it 75% full.) I cooked on HIGH for 5.5 hours then turned it down to LOW for the last 2 hours.... ~Wonderful Aroma ....TO DIE FOR!!
