Bryan's Spicy Red Lentil Soup
I followed the recipe exactly and thought this was a great dish-not too spicy either.

White Bean, Spinach, and Barley Stew
I thought this was one of the best stews I have made yet this season. I used four cups of vegetable broth instead of water to give it extra flavor. Yum!

Easy Chicken Enchiladas
I thought this dish was great. I was worried about the fat and calories so I used fat free cream cheese, reduced fat mexican cheese, and low carb tortillas. I served the enchiladas on a bed of lettuce and had black beans and rice as a side.
