Apple Enchiladas

We enjoyed the apple enchiladas almost as much as the banana and chocolate chip enchiladas. I sliced 2 bananas and added chococlate chips before I rolled the enchiladas. Serve with ice cream for an extra special treat!

Refreshing Fruit Dip

Oddly enough, this creation takes on a slightly cherry flavor. Reminds me of cherry dip from the ice cream stand. Great with sliced fruit and angel food cake.

Glazed Mint Brownies

I made a double batch of these brownies and brought them to a party. All I had to bring home was an empty plate! I thought they were a tad too minty, but these brownies are rich and decadent, so maybe folks don't mind a strong mint flavor. I'd scale back the creme de menthe (or peppermint extract, as in the recipe). Otherwise, cut them into almost bite-sized pieces so you don't overwhelm brownie traditionalists.

Cheesy Eggplant Casserole

I made this dish on a whim. It was incredibly easy to prepare and tasted much better than I was expecting. I added 1/4 cup Parmesean cheese though the meal would have been excellent without. Note - you can really taste the stuffing and the eggplant is not mealy or overpowering (for people that aren't huge fans). I even added some tomato sauce the 2nd day and spooned into a sub roll for a great sandwich at lunch.

Thai Noodle Salad

While I enjoyed the flavor of this dish, my guests would have preferred a less "earthy" taste. Next time, I'd skip the sesame oil. I also left out the ginger and the mint, but only because I'm not a fan. Otherwise, this was a fun dish to serve and was a refreshing addition to our summer BBQ - a cold noodle salad on a hot afternoon is always a hit.

Bodacious Broccoli Salad

I skipped the bacon and substituted lower fat/sugar free ingredients like light mayo and Splenda to make this dish more artery-friendly. I also added Craisins and sesame seeds - a pleasant surprise. It was a huge hit. Let the salad sit for a while to blend the flavors before serving.
