Butter Roast Chicken
I used four split chicken breasts without skin. Soaked for one hour in salted water. Like others, cut butter to 1/4 cup and reduced lemon juice to 1/4 cup (you will never miss that butter!). Cooked in uncovered roaster at 325 degrees for 1 1/2 hours, basting occasionally. Very flavorful, family loved it!
