Zucchini Cornbread Casserole
I could snack on this all day. Search for most helpful rating. The reviewer nailed it! Oh, and no need to tell the kids there's zucchini in this dish...they'll never know.

Monterey Chicken with Potatoes
So good my husband called me to tell me it was amazing. Only changes: added 1/2 c salsa and 1/2 c cheeses to original recipe and then drizzled an extra tablespoon of lime over everything. Flipped chicken halfway through cook time and basted again. Definitely a keeper, thanks for sharing!

Broccoli Cheese Soup V
We love this recipe. Like others, I choose to use a mix of Velveeta and cheddar. This recipe makes a ton, so I half the recipe. Probably due to this adjustment, it sometimes turns out a little thin for my taste so I cut back the broth a bit.
