Pumpkin Soup

Reviewed: Dec. 21, 2009
1st time I made this, it was a disaster; way too salty, way too thick, and no pumpkin flavor. It must really depend on the exact items you use. The second time around I used vegetable stock instead (and cut back on the onion to compensate) and only added a 1/4 t of salt. I also ended up adding at least an extra cup of water. It came out perfect!

Avocado Pie

I followed the instructions exactly. The filling was sloppy and no one liked the flavor. Some finished their 1 piece, others couldn't even do that.

Fresh Strawberry Upside Down Cake

Reviewed: May 1, 2009
I followed the recipe exactly. It looked and smelled excellent, the cake part baked very nicely. The whole thing came out of the pan perfectly. Too bad the stawberry part came out as a layer of rubber. People ate their pieces, but no one wanted seconds.

The spice mix was wonderful, but we needed to add salt, then it was perfect.

Easter Meat Pie

Reviewed: Mar. 12, 2009
I followed the recipe exactly. Both my husband and I found it to be salty but not bad tasting. We also didn't find the mix of meats to be anything special. If I do anything like this again, I might use just ham. Or find a good egg bake recipe.

Bacon Water Chestnut Rolls

These were an absolute hit. Although I really think it's hard to go wrong with bacon. I did only use 1/3 a strip of bacon per water chestnut.

Bandito Chicken Wings

I really loved these. I don't think I've enjoyed wings this much in a long, long time. They went over very well with the rest of the family too.

Pan Roasted Beef Tenderloin with Ginger-Shiitake Brown Butter

Reviewed: Dec. 7, 2008
Excellent flavor! I had to modify the cooking times because the meat/temp I had did not need 3 minutes per side to sear and took longer in the oven. Everything else worked very well.

Apple Chicken Stew

Reviewed: Sep. 25, 2008
I decided to use this recipe since I had some grouse to use up. This does end up being sweet tasting, but pleasantly so. I omitted the caraway and substituted onion powder for fresh onion. I used flour to thicken the gravy and ended up adding some salt to suit our tastes. It was a good dish and I may make it again.1

Grilled Venison Backstrap

I didn't change a thing, and I won't in the future either. I did a couple pieces of beef tenderloin alongside just for comparison. They do taste different, but everyone agreed that one was just as good as the other.

Nutty Wild Rice Salad with Kiwifruit and Red Grapes

I followed the directions exactly, I used real lemon juice... it was way too tart for my taste and really had no other flavor. I won't serve it again.

Herb Roasted Pork

Reviewed: Mar. 10, 2008
Easy and delicious. I managed to screw up a couple times: I used poultry seasoning once and italian seasoning another time because I did not have anything else. One time I didn't glaze it during baking, but only after it was all done. It still turned out delicious and moist every time. However, I've never bothered with a roast larger than 2 pounds and I bake it to an internal temperature just shy of 170 degrees because I like my pork roast well done.

Used angel hair, fresh tomato, and a little less basil because that is what I had on hand. Absolutely delicious.

Alfredo Light

Did this with short notice, so I used onion and garlic powders and added a couple dashes of cayenne and a splash of white wine. It was absolutely delicious on cheese tortellini and shrimp. We found it to be very flavorful and will definitely use it again, we'll try scallops next.

Red Slush Punch

Used this at a retirement party, it was a hit. Only change was to use half of the sugar... also ended up using a mallet to break up the frozen part before putting it in the punch bowl.
