Very delicious! I made it with salsa verde rather than the regular red salsa and beef broth instead of bouillion cubes. I also topped with some shredded cheese and sour cream.
Next time I would be sure to buy a leaner ground beef since 85% made it a bit greasy. Also, it makes way more meatballs than there is broth so I would either add more liquid or less meat.
Will definitely make again though. The kids really liked the meatballs!
