EXCELLENT! baked 14 min in a large airbake pan...perfect! I did add a 1/4 cup more peanut butter though:)

Joey's Peanut Butter Cookies

followed the recipe and turned out great! I prefer a crispy cookie with a chewy center, so after I baked and cooled the cookies I rebaked the cookies for an additional 10 minutes. I use an airbake pan to prevent burning the bottom of the cookies. great for camping cause it lasted 5 days and still tasted awesome.

Pistachio Cake III

Delicious! I only gave 4 stars because I followed the other reviews and modified the recipe to avoid problems others had. I baked a large 11X15" cake so I was afraid of the cake sinking, so I baked at 300 degrees. I doubled the recipe, so I used 2 boxes white cake mix, only used 4 eggs, added 1 cup sour cream, and added 1 cup chopped pistachios. I layered the cake and filled with vanilla pudding and toasted coconut. PERFECT!

Creamy Chocolate Frosting

Perfect!I definitely agree with the other reviews that this tasted better than the canned icing. I followed the other by measuring the icing first and then sifting. I also added more cocoa (instead of sugar) to get the right consistency. Instead of adding just vanilla, I added half vanilla and half strong brewed coffee to bring out the chocolate. YUM! My girlfriends and I licked the bowl clean after icing our cupcakes. (BTW-I have no idea how some reviews mentioned their icing was runny. They may have just measured the liquids wrong.)

Pad Thai

This recipe is alright. If you are not really used to eating pad thai, this will suffice. I found with using the ingredients in the recipe, the sauce was a bit too sweet, and was lacking some "asian" flavor. I followed one of the reviews and sauteed with garlic and onions first before adding the egg. I also added more fish sauce, lime juice, red chili pepper sauce and soy sauce to the sauce. In the end, I garnished with 1/4 cup of chopped cilantro, peanuts and green onion.

Easy Pancakes

This is a very good basic pancake recipe. You can easily modify this recipe too. Sometimes I substitute flour with whole wheat and it tastes awesome. Or I will just add one mashed banana for banana pancakes. YUMMMMM!!

Turkey Brine

Awesome! I made my first roasted turkey last week and this recipe made the turkey the best turkey I have ever tasted. The only thing I did different was use chicken stock instead of vegetable stock, but still turned out great!! You will never make your turkey any other way after trying this recipe.

Finnish Cookie Sticks

Follow the original recipe:). I read some of the reviews and omitted the egg paste before the almond/sugar roll because of the mess. You really had to grind the almonds very fine for it to stick well. I had leftover almonds, so I made the recipe again but did the egg paste. It really was not that messy! And the cookies looked exactly like the picture because the paste was able to grab on to the bigger pieces of almonds and to the festive Christmas sugar crystals. In the end, the cookies did taste the same but the 2nd batch had more of a crunch...yummmmm.

Chocolate Peanut Butter Cups

I got a lot of compliments on this recipe, but I think I will follow some of the other reviewers advice and add some graham cracker crumbs to the peanut butter. The peanut butter was soft and creamy, but I think it would taste a bit more like "Reeses" if the graham cracker crumbs were added. I used a silicone mini-cupcake pan and it worked out perfect...the cups just popped out and didn't even use a nonstick spray. Good chocolate fix.

Quick and Easy Thai Style Coleslaw

Very tasty! I can see how some people may not like this because of the fish sauce taste (so if you don't like fish sauce, you should use another recipe). I did add some cilantro and chili sauce for more flavor. I will definitely use this recipe again.

Ultimate Double Chocolate Cookies

This recipe should be called Death by Chocolate. I love chocolate and this is definitely as chocolate as chocolate gets. I think I may have eaten 1/4 of the batter while placing the batter onto the pans! A definite "non-guilt-free" cookie! I added roasted almonds and white chocolate to the cookies before placing in the oven and it was amazing!

Best Brownies

Excellent! I used a glass dish, so I lowered the temp to 325 degrees and cooked for ~32min. The frosting was a bit thick...I think I would just put in 3/4 cup of confectioner sugar next time. The brownie was chewy and fudgy!!! For those people who said that their brownie was "too cakey", you may want to try lowering the temp (especially if you are using a glass or dark non-stick pan) and don't overmix the batter; overmixing the batter will cause the flour to become too glutinous and cakey. hope this helps:)

Homemade Focaccia Bread

Very easy and very good. After reading the reviews, I took the advice to add herbs. I added 1 tbsp each of dried rosemary, oregano and garlic flakes prior to kneading the remaining 3/4 cup of flour. I am glad I added these herbs because it probably would have been a bit bland. I also topped with parmesan and course sea salt. USE THE SEA SALT!!! With the sea salt and the herbs, my focaccia looked and tasted like the ones at the italian restaurants!! One more thing, I just eyeballed the rising time. I actually let the dough rise for a good 1 1/2 hrs-2hrs in knowing that I wanted a fluffier type bread. I made two batches - one that I kneaded by hand and another using my Kitchen Aid stand up mixer...both were a success (use the hook on the mixer...much easier and less clean up). 4 stars because I had to add to the recipe.

Pineapple Stuffing

FIVE STARS all the way! I have tried other recipes and his one tops them all! I tripled the recipe and it just fit into a 9x13...use a drip tray though (my mistake). I baked it covered for 45 min and then took off the foil to brown for 15 more min. I found the stuffing to be a bit moist, but I left the stuffing in the oven with the oven off to keep warm until dinner (~20 min) and was perfect!

Caramel Popcorn

FABULOUS!!!The party loved this and was asking for more when the HUGE popcotn bowl was quickly emptied:). I popped closer to 7 qts of popcorn and felt it was perfect. I suggest if you don't want the popcorn to be drenched with too much caramel, pop more popcorn,

Simple Scones

This came out perfect! thank you for the tip on making cranberry orange scones. I had added 2 more tsp. of orange zest for more flavor. I made them for mother's day bruch for my fam and everyone loved them, especially my mom:)
