Connie's Zucchini 'Crab' Cakes
These really don't taste like crab, but they are great! I used Trader joe's 21 seasoning salute instead of Old bay so I could adjust the salt. (old bay is too salty for me) Everyone loved them and I'll be making them again for sure.

Refried Bean Enchiladas
Delicious! I took the advice of another reviewer and added fresh minced onions to the sauce and rinsed and drained black beans on top of the enchiladas. Yum, everyone loved them, I'll definitely make these again.
