My favorite things to cook
I love to bake, which is rather unfortunate because it usually involves something fattening. I like to try different breads and desserts. I usually find things in order to use something up. I have been changing recipes around to be as healthy as possible, by using whole wheat flower or yogurt or milk rather than oil. I cut where I can and play around a lot to find out what tastes good. I use a lot of garlic. I think everything tastes better with garlic. Try chopping up a couple of cloves, sauteing with a little olive oil, and steaming your fresh vegatables with it. Add a little salt and oregano, and you have some yummy, healthy veggies.
My favorite family cooking traditions
We actually don't have many particular cooking traditions, and I have really come into my own style as an adult. I do love my mother's meatloaf though and flat out refuse to try another recipe. I make it leaner by using a lean ground beef (sirloin or better).
My cooking triumphs
I have chocolate velvet cake recipe that I just adore. It is so versatile and delicious. I have used it with several types of frosting and it comes out unique and delicious every time.
My cooking tragedies
This past St. Patrick's day I attempted to make a corned beef and cabbage with Guiness in the crock pot. I followed the recipe instead of my instincts and the veggies were still hard when it was time to eat. The meat also lacked flavor. It was just bad, and I was trying to do something special for my parents.

Spinach Tomato Tortellini
My family really loved this dish. I used fresh tomatoes, 1/2 small onion and extra garlic sauteed in olive oil, rather than using a can of tomatoes. I also added some Italian Sausage, which I highly recommend. Delicious!

Scrumptious Frosted Fudgy Brownies
I struggled with what to give these brownies. I followed the recipe exactly. They are extremely rich. A small, bite-size piece is enough. We are dark chocolate lovers and they were still a bit much when it comes to richness. I did appreciate the icing and will likely use it again on another brownie or a cake recipe. This recipe is worth trying if you like rich, heavy brownies.

Enchilada Casserole III
This casserole was very good. I added a can of chopped green chilis and onions while cooking the meat, and I used extra cheese. My only problem was with the sauce. I made 2 packages of enchilada sauce and still ran out, and the casserole tasted like it could use some additional sauce. Next time I will either fix the enchilada sauce the traditional way or add more water with it. In either case, I will have a 3rd sauce packet ready. And I may try refried black beans next time. I will make again.
